About My Meal Ideas
My husband and I work second shift, and so the main meal of our day is actually at work.
As such, I plan the week ahead for things that can be easily re-heated since I can't very well bring my stove in to work.
The problem is that every week as I prepare the grocery list, my mind draws a total blank! I can't remember a single thing that I like to eat, or what my husband likes. And so I'm building a lens of our favorites.
Spanish Chicken Wraps
Heated up tortillas, sour cream, Sargento's 6 cheese Italian blend, sauteed green peppers optional.
Chicken Ala King Pie
Preheat oven to 350 degrees. Lay crescent roll pie crust across the pie plate and smooth down.
Cook 1 lb chicken (boneless) in large skillet. Add 1 can mixed veg, drained, 1 cup shredded cheese (cheddar/6 cheese italian, etc), some ground black pepper, and 1 can cream of chicken soup. Stir till mixed thoroughly and fill pie crust with mixture, and top with rest of crescent roll crust.
Bake for 1/2 hour.
Sliced Ham For Sandwiches or Quesadillas
Too Simple To Explain
- Boiled pork shoulder butt (ham roll), sliced and used for sandwiches
- Chicken salad sandwiches
- Mini quiches with 1/2 ham steak each (or 1 breakfast ham slice each), and steamed broccoli
Sausage Meal In A Slow Cooker
Layer chunked potatoes, lightly salt and pepper.
Lightly brown sweet or hot italian sausages, and layer on top of beans and potatoes.
Cover and cook on low for 8-10 hours.
Option: add sliced or diced onion, a few flakes of crushed red pepper, and garlic.
Pseudo-Stew
Sprinkle in some black pepper, cayenne powder, crushed red peppers, and a packet of low sodium beef boullion (not cube).
Top with lightly browned stew meat, and pour 4-6 oz. of V8 over it. Cover and cook on low for 8 hours.
