Check out the recipe below to learn how to make this truly British food. It was my mom's recipe and it always turned out delicious, at least when she made it. Could be because she was born and raised in England and she liked to cook. I, on the other hand, hate to cook! And when pressed into it, I cook easy recipes with few ingredients. And I use gadgets. All those cool kitchen gadgets that make it fun to cook.
The first recipe below is the way my mom cooked. The second one is my conversion of her recipe into something I could cook.

My Mom's Yorkshire Pudding Recipe

- Serves: 6 - 8
- Prep Time: 10 minutes
- Total Time: About 20 minutes
My mom cooked using a pinch of this and a scoop of that. I never did learn to cook this way. Her recipes always turned out delicious though.

Ingredients
- Around 1 - 2 scoops of flour
- A pinch of salt
- 2 - 3 eggs
- beaten
- Enough milk to make the batter thin
- May need a couple tablespoons of Crisco
Instructions
1. Bake pot roast until done, then remove from oven. Leave covered.
1. Turn oven up to 425 degrees
2. In 9x13 glass baking dish, put drippings from potroast and add one BIG spoon of Crisco to it and put it in the oven.
3. While the Crisco is melting, mix the first 4 ingredients until a thin batter is formed.
4. When grease and dripping are piping hot, remove from oven, pour batter into hot grease and pop back into the oven.
5. Bake until brown, cut into squares and serve HOT!
My Yorkshire Pudding Recipe

- Serves: 6 - 8
- Prep Time: 10 minutes or less
- Total Time: 30 minutes
I have to have measurements. A pinch of this and a dab of that just doesn't work for me!

Ingredients
- 1 1/2 cup unbleached flour
- 1/2 tsp salt
- 3/4 cup milk
- 2 - 3 eggs
- beaten
- May need: Light olive oil or canola oil - few TBS
Instructions
While roast is cooking:
1. Remove roast from oven and spoon drippings into a 9x13 inch glass pan (about 1/2 cup). If there is not enough drippings, may add Crisco or liquid oil (I use a light Olive oil).
2. Mix flour, salt, milk and eggs together using a whisk. Batter should be thin and pour easily. May need to add a little more milk if batter is not thin enough.
3. Increase oven temperature to 425 degrees F (220 degrees C) and put glass dish with oil and drippings in oven for a few minutes to insure grease is very hot. Then remove from oven.
4. Pour batter into pan with drippings and bake in preheated oven for 25 to 30 minutes. Yorkshire pudding is done when it is puffy and top is brown.
5. Cut into squares and serve with roast and gravy. According to my mother - It MUST be served right away while hot.
The SURPRISE - Yorkshire pudding is really a soufflé!
Bittersweet Childhood Memories
Ten years ago my mother developed lung cancer. About a month before she passed away, she had invited my family and I for lunch. She planned to have roast and Yorkshire pudding. That day I found her in the kitchen with a mixing bowl in hand, flour on the counter, and a confused look on her face. When I asked her what was wrong, she just looked at me with tears in her eyes. It took me a few minutes to realize that she had been trying to make the Yorkshire pudding but was unable to remember how to make it. The same recipe she had made for her family all of our lives. I knew then that the cancer had spread and her time with us was coming to a close.
Today, I rarely make Yorkshire pudding (so unhealthy!), but when I do it makes me smile and think of my mom and those warm, childhood memories. And of course, mine never turns out half as good as hers!

- My mother died almost 10 years ago from lung cancer, too. I wrote a chocolate covered cherry lens about her favorite holiday candy recipe. In other words, I know how you feel. That Yorkshire pudding looks really tasty! I bet my own kids (and grandkids) would love it.

- I have a yorkshire terrier, but have never tried the pudding:-) I join you in hating to cook, will lensroll to my cake for those who hate to bake lens. Actually it's baking and desserts that I don't like doing, cooking meals is okay.
