Peruvian Style Chicken

A few months ago my husband and I had something similar at a very popular restaurant .
When we came home we decided that we were going to try to do it . We did a little research and this is the recipe that we come up with .Even my nieces that doesn't like chicken love it !

* 1 whole chicken
* 3 tablespoons white wine
* 3 tablespoons olive oil
* 5 garlic cloves minced
* 2 tablespoons paprika
* 1 1/2 tablespoons cumin
* 2 teaspoons black pepper
* 1 teaspoon salt
* 1/2 teaspoon dry oregano
* 2 lemons squeezed
* 1/3 cold water

HOW TO PREPARE -

Put all together the juice of 1 lemon , wine, oil , garlic , cumin, paprika, black pepper,oregano , and salt. Mix well to form a paste. Add lemon juice to cold water. Trim chicken of any excess or loose fat. Wash chicken thoroughly with lemon water. Place chicken in zip-top bag. Pour spice paste over chicken. Coat chicken completely with mixture rubbing into every surface. Try to get the paste under the skin as much as possible.

Seal bag and place chicken in refrigerator for at least 2 hours. The chicken will have more flavor the longer it stays in the spice mixture.

Preheat oven to 350 degrees F. Put the chicken in the roasting pan . Cook, uncovered, for 1 1/2 hours or until it is golden brown.

Peruvian chicken is frequently served with aji sauce and white rice .
