A Bit of Creamy Elegance

Victoria and Albert's is the only 5-star restaurant on the grounds of Walt Disney World, and it shows. Your server takes you step by step through each element of your meal, telling you about the origins of everything and why everything is the best of the best. Of course, that may not be your thing, but it can be quite interesting.
You don't need the absolute best of the best to make this creamy, savory butternut squash bisque, however. The smooth blending of buttery, savory flavors washes over your tongue, giving you the experience of the elegance of Victoria and Albert's without needing to don a shirt and tie, but, of course, you can if you want to!
The Hardware
All the Gear You'll Need
- 4 quart pot
- Blender
- Strainer
- Cheesecloth
- Measuring cups and spoons
Butternut Squash Bisque

- Serves: 10
- Prep Time: 30 min
- Total Time: 2 hr 30 min
Ingredients
- 2 tablespoons butter
- 2 tablespoons shallots - chopped
- 1 tablespoons garlic - chopped
- 1/2 cup celery - chopped
- 1/2 cup carrots - chopped
- 1/2 cup onions - chopped
- 8 cups butternut squash - peeled and chopped
- 1 pinch thyme
- 1 pinch basil
- 1 pinch oregano
- 1 bay leaf
- 4 cups chicken stock
- 16 ounces heavy cream
Instructions
1. In a 4-quart pot, heat butter over medium heat until hot.
2. Add all other ingredients EXCEPT chicken stock and heavy cream.
3. Saute for five minutes.
4. Deglaze the pot with the chicken stock.
5. Add the heavy cream.
6. Let soup simmer, uncovered, over low heat for 1-1/2 to 2 hours.
7. Puree in a blender.
8. Strain the soup through a strainer lined with cheesecloth.
9. Place soup back into a clean 4-quart pot.
10. Return the pot to the stove over low heat.
11. Adjust seasoning with salt and pepper and serve.

When Ready to Serve

1. Ladle the soup into a bowl.
2. Garnish with some fresh herbs and/or Creme Fraiche.
3. Serve with a nice, crusty bread to sop up the remnants.

- I currently have a butternut squash in my frige. I was thinking about roasting it along with some other vegetables but this recipe looks fantastic too. Thank you for sharing it!!
