Gratin de Macaroni
One of the hidden gems there is the gratin de macaroni - a simple baked macaroni and cheese that is surprisingly elegant, not exactly what you're used to mom cooking at home (well, perhaps your mom did, I don't know for sure...) so let's find out more about this tasty dish and make some for ourselves!

Les Chefs de France brings to mind all of the wonderful things about French cuisine - elegance, richness, and just a plain and simple love of the art of food. The food there doesn't forget to highlight each of the ingredients, no matter how rich and heavy elements may be, they all blend together beautifully in a symphony for the mouth. If you have ever seen the Disney-Pixar film Ratatouille, the spirit of that sort of love of food is alive in this restaurant, and you may, in fact, be visited by Chef Remy should you ever dine there.
As for my trip to Chefs de France, while I did enjoy my salmon, I did find myself envying my girlfriend due to her dish. She, of course, let me sample the rich, creamy, delicious dish that was the gratin de macaroni - the tasty blend of cream and Gruyère made the dish so much more than just your standard macaroni and cheese - and the lightly browned top just sealed the deal on how tasty the whole affair was. I was extremely pleased to receive this recipe, and definitely plan on using it quite frequently in the future.
The Hardware
All the Gear You'll Need
- Large baking dish
- Large pot for pasta
- Small saucepan
- Medium saucepan
- Whisk
- Aluminum foil
- Measuring cups and spoons
Note
This is the recipe as I received it - however, if you want your dish to be closer to the Les Chefs de France version, you may want to use a pasta more similar to ziti, a bit longer than the elbow macaroni.
Gratin de Macaroni

- Serves: 4
- Prep Time: 35 min
- Total Time: 45 min
Ingredients
- 3/4 pound elbow macaroni
- 3 cups whole milk
- 4 tablespoons unsalted butter
- 1/3 cup flour
- 1 pinch nutmeg
- 1/2 cup heavy cream
- 1 1/2 cups shredded Gruyère cheese
- 2 tablespoons freshly grated Parmesan cheese
- Coarse salt and freshly ground black pepper - to taste
Instructions
1. Preheat oven to 400 degrees.
2. Butter a large baking dish; set aside.
3. Begin cooking macaroni until just al dente, or slightly underdone. (Keep a close eye on your pasta while you cook the sauce - you would not want to overcook it!) Drain and set aside when done.
4. While the macaroni cooks, heat milk in a small saucepan over medium heat - do not let simmer.
5. Melt butter in a medium saucepan.
6. Add flour to melted butter.
7. Stir 1 to 2 minutes, until butter-flour mixture is golden.
8. Slowly whisk in warm milk.
9. Add nutmeg, salt, and pepper.
10. Cook sauce, whisking often, until thickened - about 10 min.
11. Remove from heat.
12. Add heavy cream and half of the Gruyère cheese.
13. Stir until cheese is completely melted.
14. Combine macaroni with cheese sauce.
15. Pour the macaroni and cheese into the large baking dish.
16. Top with remaining half of Gruyère and Parmesan.
17. Cover dish with foil.
18. Bake 10 minutes.
19. Remove foil and continue baking until cheese is golden brown.
20. Remove from oven and let cool for at least 10 minutes before serving.

When Ready to Serve
1. Dish out onto a plate.
2. Use a larger portion if the gratin de macaroni is the main course.
3. Garnish with slices of tomatoes or an herb sprig, if desired.
