Spicy Potato and Pea Samosas
A very popular dish there is the crispy fried spicy potato and pea samosas - a nice little vegetarian entree that can be served as an appetizer, a side, or if you choose to go all out with them - a main course! So just what are these little pockets of goodness? Read on to find out!

So Just What is a Samosa?

I remember the first time I heard someone talking about samosas - yes, I may be silly an ignorant to the world of food, but I was very confused, as I started thinking of something along the lines of a mimosa, which, of course, is a VERY different thing altogether. So what exactly is a samosa?
A samosa is a stuffed, deep-fried pocket of pastry (not entirely dissimilar to an empanada) containing any of a large number of different stuffings, from purely vegetables to meat and cheese, for those of you who are not vegetarian-inclined! The tasty pockets of goodness had their beginnings in India, but quickly spread to the Middle East and the north of Africa, which is why you'll find it in the Tusker House in Harambe Village.
It's easy to see why these spread do quickly! There's nothing like biting into that nice, flaky pastry, and feeling it give way to a nice, hearty pea and potato blend in the middle - savory, sweet, and a little bit spicy. Wonderful stuff - so time for you to learn how to make 'em for yourself to enjoy when you're not in Harambe!
The Hardware
All the Gear You'll Need
- Medium mixing bowls
- Medium pan for sauteing
- Frying pan deep enough for 2 inches of oil, or deep fryer
- Measuring spoons and cups
Note
If you're in a hurry, wonton wrappers may be used as a substitute for the pastry shells, and leftover mashed potatoes can be used in place of the fresh potatoes.
Pastry Shell

- Serves: Yields 10 Samosas
- Prep Time: 15 min
- Total Time: 45 min
Ingredients
- 2 cups flour
- 1/2 teaspoon salt
- 4 tablespoons vegetable oil
- 3/4 cup water
Instructions
1. Mix flour and salt in bowl.
2. Add oil and rub until mixture resembles small bread crumbs.
3. Add water and knead for 10 minutes.
4. Rub dough with oil.
5. Cover and set aside for 30 minutes.
Potato and Pea Filling

- Serves: Yields 10 Samosas
- Prep Time: 15-20 min
- Total Time: 30-35 min
Ingredients
- 5 potatoes (red potatoes are recommended)
- 2 tablespoons vegetable oil
- 1 green chili (de-veined and seeds removed)
- 1 cup green peas (frozen or fresh work best)
- 1 teaspoon ground ginger
- 2 teaspoons salt
- 1 teaspoon ground cumin
- 1 teaspoon curry paste (if you prefer extra heat
- add hot sauce)
Instructions
1. Boil potatoes until tender.
2. Cool, peel, and dice the potatoes.
3. Saute peas in oil.
4. Add green chili, potatoes and spices.
5. Mix and cook on low heat for 4 to 5 minutes.
Potato and Pea Samosas

- Serves: Yields 10 Samosas
- Prep Time: 15 min
- Total Time: 20-30 min
Ingredients
- Pastry (See above)
- Potato and Pea Filling (See above)
- Vegetable oil for frying
Instructions
1. Divide dough into 10 balls.
2. Roll into flat square shape about 5 inches across.
3. Cut in half and fill each side with 1 tablespoon potato and pea mixture.
4. Brush a little water around the edge of the pastry.
5. Fold, seam and seal the pastry into a triangle.
6. Heat about 2 inches of oil for frying over medium to low heat to 350 degrees.
7. Carefully add samosas to oil.
8. Fry slowly, turning the samosas as they brown and are crisp.
9. Remove from oil.
10. Let oil drain from samosas before serving.
