Sweet Potato Pancakes

The Port Orleans Resort at Walt Disney World features two different looks at the area around and in New Orleans - Riverside, featuring plantation mansion style buildings and a classic 19th century river port feel, and French Quarter, which feels much more like you're wandering through the streets of New Orleans during a family-friendly Mardi Gras.

Of course, both sides feature some of New Orleans's finest signature dishes, and although Boatwright's on the Riverside no longer serves breakfast, I felt it would be a sin to not share this delicious recipe - you may not be able to get it at Walt Disney World anymore, but you can certainly make it in your own kitchen!

A Bit of Sweetness Down by the Riverside

As you sit in Boatwright's, you'll notice all sorts of shipbuilding tools and nautical-themed decor all around, including the rather impressive centerpiece of the restaurant: the large, wooden skeletal beginnings of a ship that will make its way out from the port of New Orleans.

Of course, as you're sitting in the restaurant, though you may enjoy the old southern hospitality, what you're going to be wanting most of all is the food. You are certainly not going to be disappointed, and back when Boatwright's served breakfast, the sweet potato pancakes were a star all their own.

Light, fluffy, and sweet with a bit of creaminess given from the well-mashed sweet potatoes, the pancakes could stand beautifully on their own, but for a bit of indulgence, there's no further you need to look than the honey pecan butter. With that addition, you likely won't even find yourself reaching for the syrup with the sweetness of honey and the sweet potatoes, and the pecan just add a little bit of a difference in texture!

  • Medium mixing bowl
  • Electric hand or standing mixer (or a whisk if you don't mind a bit of arm work)
  • Small mixing bowl
  • Small, nonstick frying pan
  • Measuring cups and spoons

1. Place as many pancakes as you like in a stack.

2. Top with a bit of butter (or more if you love things buttery!)
