Here is a recipe that will MAKE you celebrate the brownie!

Attention! This recipe is the absolute best homemade brownie you will ever put in your mouth! So celebrate the chocolate brownie!

By the way, December 8th is the "official" National Chocolate Brownie Day in the US! As if one needed an excuse to make brownies!

Why do we love brownies? Because they are made with chocolate? Because there are so many great mixes that are easy to make? Who knows the real answer? Who really cares why we love this delectable treat?

Almost everyone I know has a favorite scratch recipe or mix that they swear by. Those same cooks also have a secret ingredient or trick that they use to make their "award-winning" chocolate brownie. (My secret for box brownies is to throw in a handful of chocolate chips!)

I have assembled here a collection of articles and websites that have fantastic brownie recipes to tempt you away from the box mix you currently use. I am also including my favorite scratch recipe for brownies. I found it in the August 2009 Southern Living Magazine. After I made the recipe from Southern Living Magazine that I am sharing with you below, I decided that I will no longer buy a mix--unless I must. Sometimes one just needs to use a mix when the pantry is lacking in ingredients. However, I must say that it was extremely easy to make the scratch brownie recipe I am sharing.

My New Favorite Homemade Chocolate Brownie Recipe:

"So Good Brownies" Recipe (from Southern Living Magazine August 2009)

Hint: use a plastic knife (the kind that comes with take-out food) to cut the slightly warm brownies with no mess!.




So Good Brownies!

4 (1 oz)unsweetened chocolate baking squares (I used Ghiradelli)
3/4 cup unsalted butter
1 1/2 cups granulated sugar
1/2 cup firmly packed brown sugar
3 large eggs
1 cup all-purpose flour
1 tsp. vanilla extract
1/8 tsp salt


1. Preheat oven to 350 degrees. Line bottom and sides of an 8-inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides; spray foil with Pam.
2. Microwave chocolate and butter in a large micro-safe bowl or measuring cup at High 1 1/2 to 2 minutes or until melted and smooth stirring at 30-second intervals. Impt! to do this step. Whisk in granulated and brown sugars. Add eggs, 1 at a time, whisking just until blended after each addition. Whisk in flour, vanilla and salt. (NOTE: you might need to switch to a spoon when adding the flour).
3. Pour mixture into prepared pan.
4. Bake at 350 degrees for 40 to 44 minutes or until a wooden pick inserted in center comes out with a few moist crumbles. Cool completely on a wire rack (sure!) Lift brownies from pan, using foil sides as handles. Gently remove foil and cut brownies into sixteen squares.

The most important tool you must have is a plastic knife! The kind of plastic knife that comes with "take-out" meals or that you can get at a fast food restaurant! Why? It is the best knife to cut brownies! No sticking. No crumbles. Honest. Works really well when the brownies are warm. So go ahead and enjoy those freshly made brownies--now!
