January 26 is National Peanut Brittle Day
Brittle was one of the first types of dessert or candy ever made. It is thought that the Irish enjoyed eating sugarcoated peanuts as a tasty treat. Later, they began to add syrup to the peanuts, thereby creating the first peanut brittle. Recipes for the sweet delicacy began to appear in US cookbooks during the 19th century.
It's not known why January 26 was chosen to be the day to commemorate peanut brittle. Personally speaking, it could be every day of the week, but that would be too much of a good thing...wouldn't it?

- pinch of salt
- 1 cup dry-roasted peanuts
- 2 tablespoons butter
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- cooking oil spray

I used to make peanut brittle as part of my holiday candy/cookie treats, but now that the family is all grown, I'd buy it from a store. But, to be specific, I'd get it from a 'confectioners' type store so it tasted close to homemade. :) There just happens to be a terrific candy store on River Street in Savannah and I just 'happen' to be going there to visit next week! Peanut brittle, here I come!

- I love peanut brittle, but had actually sort of forgotten about it. I had always cheated with a microwave recipe, but looking forward to trying these recipes. Now, I can't stop thinking about peanut brittle. :)
