Below is a review of the Green Pan:

The Green Pan is a heavy (recycled) aluminium pan and the first to be coated with a material made from minerals. Conventional non-stick coatings are made with a waxy, synthetic substance) which not only underperforms. It contains a pollutant - perfluorooctanoic acid (PFOA) - which has also been described as a potential carcinogen.

Also, a conventional pan coating seldom lasts because it begins to disintegrateif it is used above 250C (482F). Often this is an accident: as a result of leaving a pan on the heat for too long before adding oil, or turning the heat up too high to brown or ''sear'' meat. The maker of Green Pan says you can heat it up to well over 400C (750F) before the mineral-based coating, which they call Thermalon, loses its non-stick ability.

Yet an eco-friendly pan is no good if it does not cook food well, and it is good to report that the Green Pan does perform. Sometimes a non-stick pan can be so slippery the food does not seem to brown. However, the potatoes I sautéed in olive oil at under 200C (390F) cooked to a satisfying golden crunch, while the oil kept its grassy flavour and did not burn. Burgers and chops also cooked well.

Be careful with this pan, however. It is not cheap, and is not indestructible. The makers recommend never heating it ''dry'', using too little fat or, if boiling, not allowing the contents completely to evaporate. When you have finished cooking, the pan should not be run under cold water while still hot. As someone who has destroyed one of these pans by breaking all these rules, I can vouch for their importance.

Green cookware is the only way to go. The cancer rate is soaring and it is coming from all sources. If you can do something to manage the cause of cancer then a little price bump is well worth it. Actually things that are cheap are more expensive in the long run.
