What Is Veganism?

Veganism is a diet and lifestyle that seeks to exclude the use of animals for food, clothing, or any other purpose. Vegans endeavor not to use or consume animal products of any kind. The most common reasons for becoming a vegan are ethical commitment or moral conviction concerning animal rights or welfare, the environment, human health, and spiritual or religious concerns. Of particular concern to many vegans are the practices involved in factory farming and animal testing, and the intensive use of land and other resources for animal farming.
Vegan diets (sometimes called strict or pure vegetarian diets) are a subset of vegetarian diets. Properly planned vegan diets are healthful and have been found to satisfy nutritional needs. Poorly planned vegan diets can be low in levels of calcium, iodine, vitamin B and vitamin D. Vegans are therefore encouraged to plan their diet and take dietary supplements as appropriate. Various polls have reported vegans to be between 0.2% and 1.3% of the U.S. population, and between 0.25% and 0.4% of the UK population.
Vegan Strawberry Cheesecake
Pomegranate Soyashake
Soya Milk
Vanilla Rice Dream or other vegan ice cream
1. Mix one part syrup to five parts milk and stir well
2. Top with a scoop of ice cream.
Dukka
2oz roasted chickpeas
1oz hazelnuts
2oz coriander seeds
2 tablespoons cumin seeds
1/2 teaspoon celery salt
1/4 teaspoon black peppercorns
1/2 teaspoon chilli powder
Place the sesame seeds on a baking sheet in a hot oven for about 2 minutes. Remove and set aside.
Place the chickpeas and hazelnuts on a baking sheet in the oven for about 3 minutes. Remove add to the seseme seeds and set aside to cool.
Once cooled add the remaining ingredients and whizz in a blender or spice mill.
Serve with a bowl of warm olive oil and flatbread for dipping.
Garlic and Butterbean Soup
4-6 garlic cloves
1 onion chopped
1 stick celery chopped
1 bell pepper chopped
1 carrot chopped
1 can Butterbeans
1 can tomatoes
12floz Vegetable stock or water
1tsp rosemary
Black Pepper to taste
1. Fry the pepper, onion, celery, carrot and garlic in the oil until translucent.
2. Add the rest of the ingredients and bring to the boil. Reduce heat and simmer for 15-20 minutes over a low heat.
3. Allow to cool and blend until smooth.
4. Season to taste and serve with a good bread.
Super Spicy Tomato Sauce
1 finely chopped onion
4 crushed garlic cloves
2 tbsps balsamic vinegar
1 tablespoon chopped fresh basil
1 teaspoon hot chilli powder or 2 fresh chillies deseeded
1 teaspoon of paprika
2 tbsps tomato puree
1 tablespoon lemon juice
1/2 teaspoon dried italian seasoning
1and1/2 cans chopped tomatoes
2 tablespoons chopped fresh parsley
salt and black pepper to taste
1. Fry the onion and garlic in the oil until softened.
2. Add the tomatoes followed by the rest of the ingedients (except the parsley and seasoning)
3. Simmer uncovered for 15-20 mins
4. Season and add the parsley.
5. Serve with pasta.
