What you need
10 squares of nori seaweed
20 pieces of spring roll skin
salt
pepper
sesame oil
1 egg white lightly beaten

Sauteed Asparagus, Shiitake and Iwanori

This is another "Shojin" (Buddhist-style vegetarian) style appetizer.
Ingredients
1/2 lb. asparagus, trimmed, blanched, and cut into 3"-long
4 ea. shiitake mushrooms, sliced
1 tbsp. sesame oil
1/2 tbsp. soy sauce salt
handful of iwanori (rough-texture nori seeweed)
Procedure
Heat the sesame oil in a pan and saute the shiitake mushrooms at medium-heat.
Add the asparagus and continue to saute for another minute.
Add soy sauce, and a pinch of salt (if necessary).
Add iwanori right before turning off the heat and toss well. (Add more sesame oil if necessary.)

Deep Fried King Prawns with Seaweed

Ingredients:
1 pc King Prawn
1 sheet (2" × 4") Japanese Seaweed
3 tbsp Batter Power
4 tbsp Water
1 ttbsp Chopped Sring Onion
Tools:
1 pc Skewer
Serve with:
50g Mixed Green salad
Marinade:
1/2 tsp Salt
Pinch of Pepper
1 tbsp Chinese Wine
Method:
1. Shell and devein prawn, leaving head and tail intact.
2. Marinated prawn.
3. Roll up prawn with the seaweed.
4. Threat it on skewer.
5. Mix batter powder with water until smooth, add chopped spring onion.
6. Coat prawn with batter.
7. Deep fry prawn with 200 %u2103 oil until golden then 150 %u2103 for 3 minutes.
8. Remove bamboo stick and serve with green salad.

Okonomiyaki

Okonomiyaki is a popular pan fried food(Japanese style pizza) that fits the same ecological niche in japan as pizza does in US. It consists of batter and cabbage with selected toppings such as sliced pork, yakisoba noodles, green onion, squid, shrimp, bean sprouts and others. As the name indicates "okonomi" literally means "to one's liking", you can add whatever ingredients you like in okonomiyaki. Okonomiyaki is very popular in Osaka and Hiroshima and have their own style in cooking okonomiyaki. In Japan, people usually eat okonomiyaki at restaurants that specialize in the dish. The attractive point in okonomiyaki restaurant is that you are free to cook you own style okonomiyaki on the dining table equipped with an iron griddle ("teppan").
Ingredients:
2 cups shredded cabbage (1 1/2 inch strips)
1 cup green onion chopped
2 eggs
1 cup water
2 tbsp sake
1 cup tempura batter/flour
1/4 cup vegetable oil
200g shrimps (others seafood as much as you like)
okonomiyaki sauce
katsuobushi (bonito flakes)
mayonnaise
aonori (seaweed/green laver)
beni shoga(red ginger)
Preparations:
Beats the eggs in a large bowl. Add flour and water and beat mix well. Add in sake, cabbage, green onion. Heat 1 tbsp vegetable oil in a skillet. Pour the batter over the skillet and make a round. Then sprinkle 1/2 of the shrimp, and others seafood on top. Cook each side on medium heat for 2 minutes, until lightly browned. Reduce the heat to low and cook, covered for another 5 minutes, occasionally turning and gently pressing the okonomiyaki with a spatula. Flip the okonomiyaki again and spread okonomiyaki sauce and mayonnaise on top. Sprinkle aonori over the sauce. Sprinkle katsuobushi (bonito flakes) and beni-shoga (red ginger) for topping.

Tofu Seaweed Tempura

20 oz. firm tofu, drained3 Tbsp. soy sauce
2 tsp. sesame oil
1 cup unbleached white flour, plus extra for dusting
1 tsp. baking powder
1/2 tsp. black pepper
1/2 Tbsp. Bragg liquid aminos
Approximately 1 cup water
3 sheets of nori seaweed
2 to 3 cups fresh bread crumbs
2 cups vegetable oil for deep-frying
Sauce:
1/4 cup soy sauce
3/4 cup water
3 Tbsp. raw sugar
1/2 tsp. sesame oil
2 tsp. cornstarch mixed with 2 Tbsp. water
Fresh daikon and ginger, finely grated, for serving

- I like seaweed, not just nori but so far any I have tasted. I think kelp and dulse are great, I also like wakame.
