Anytime Scramble

A surprisingly delicious and satisfying scramble perfect for breakfast, a late night snack, or any time!

Time: Aprox 10 Minutes

What You Need:

Cooking oil
2 large eggs
1 sweet apple
Garlic salt (or regular salt)
  • 1Heat up a little cooking oil in the bottom of a pan on low heat.
  • 2Dice 1 apple into smaller than bite-sized pieces.
  • 3Crack open two eggs into pan. Stir until eggs are nearly cooked to the consistency you prefer them. Add diced apple and stir in.
  • 4Sprinkle with garlic (or regular) salt. Cook until eggs are at preferred consistency.

Turkey Helper

Here's an easy way to make a healthier alternative.

Time: Aprox 20-30 mins

What You Need:

Cooking Oil
Your choice of Hamburger Helper box
1 package of ground turkey
Low-fat milk
Salt
Pepper
(optional) dry white wine.
  • 1Heat up cooking oil in a large, deep pan on medium heat. Add package of turkey, stir until brown and no pink is showing.
  • 2(Optional to prevent turkey from drying out and for additional flavor) Add 1 cup dry white wine. Sprinkle a little salt and pepper on the turkey. Cook until amount is reduced by half.
  • 3Add however much milk is dictated by the recipe, but use low-fat milk.
  • 4Add Hamburger Helper package and cook however long the box says.
  • 5Enjoy a healthier and more flavorful alternative!

Grown-Up Toasted Cheese Sandwich

Makes a great lunch, perfect for a filling power-breakfast!

Time: Aprox 10 minutes

What You Need:

Two slices of break (I like sourdough)
Cheese of your choice
1 tomato
  • 1Heat up oven to around 300 degrees.
  • 2Take your bread, slice your cheese and put it onto your bread. Add tomato slices.(trust me, it's delicious.) Close sandwich.
  • 3Put sandwich in oven. Toast until cheese is melted and bread is slightly toasted. Enjoy!

Fish And Clam Chowder...The Easy Way

Time: Aprox 30 mins.

What You Need:

Olive Oil
Butter (or substitute)
Garlic
Onion
Dry white wine
Potatoes
I can of minced clams
I small or half can of canned corn
Thyme
Some kind of white fish (2 fillets is smaller like Tilapia, 1 if larger)
1 1/2 cups Fat free half-and-half
I baguette

*Tip: The longer it sits after done cooking, the better it tastes, so this is a perfect leftover dish!
  • 1Heat olive oil and 1 spoonful of butter (or substitute) in bottom of a large pot. Add a clove or 2 of garlic and 1/2 an onion (I use yellow.) Cook on medium heat about 5 minutes or until onions are soft.
  • 2Add half a cup of dry white wine, turn heat up, reduce to about half.
  • 3Add 1 medium potato, chopped up, clams, corn, thyme, salt, and pepper. Liquid should just cover potatoes, if not, add water. Cook on medium 10-15 min or until potatoes are almost done.
  • 4While waiting heat 1 1/2 cups of fat free half-and-half in another small pot on low heat until steaming. Careful not to boil.
  • 5Add fish and steaming half-and-half. Cook on low heat 10 minutes.
  • 6Turn off heat. Let sit 10 minutes (tastes better the longer it sits)
  • 7Break baguette and eat!
