Healthy Food is Nutrient Dense

We have supermarkets full of all kinds of food. Our bookstores carry a full line of cooking, health and diet books and everywhere we turn, someone is giving us advice about what to eat. In spite of all of it, American's are losing the battle for their health. Diabeties is on the rise as waist lines are getting bigger. I doubt I have to list the diseases that are running rampant through our population. We face everything from arthritis and cancer to tuberculosis and mersa. I saw a news clip this morning that said 28% of our children are on some kind of medicine. Instead of living a life of wholeness and vitality, many of us are tired, overweight and frustrated. I believe it's time to stop watching our weight cycle up and down as we "try a different diet this time" and actually eat nutrient dense foods that will satisfy our cravings and bring our systems back into balance. It really is a case of getting back to basics.

Healthy Eating Makes Sense

And it doesn't have to be boring either.

We all know that we need fiber, vitamens, minerals, etc. The problem is that most of what is really healthy for us to eat needs to be prepared. You can't just grab it out of a vending machine. That doesn't mean it takes hours to prepare. In most cases, you need to retrain how you think about food and plan what you are going to do with it. After a month or so, you will have new habit patterns and it gets easier. Meanwhile, try to visit restaurants that prepare vegan and/or organic food. Everytime you find something that you really like, find a recipe for it so that you can add it to your dinner menu. Do that often enough and you will have a different meal every night for a month. Who said good food was boring?

Also, learn to work smart. If you are making an evening salad, make extra to go into the next day's wrap. It doesn't take much more time and you only wash the cutting board once.

Green Smoothies

Try something different

Have you every heard of green smoothies? Yes, they look different but they taste wonderful and if you have a blender, you can whip one up for a quick, nutritious breakfast.

My basic smoothie recipe:

A bunch of lettuce (romaine, greenleaf, redleaf, etc.) Amount determined by how much I want to make so feel free to experiment but the taste is mild so use a lot. Sometimes I add a little frozen kale. Freezing it helps it to break up in the blender but it has a stronger taste so I mix a little of it with other greens.

1/2 cup whole milk french vanilla (organic, Stoneyfield Farm) yogert

Some water (as desired)

Blend until greens liquify then add

2 frozen bananas (peel before you freeze them)

4 or 5 frozen strawberries

1/2 - 1 tsp oil (flax, avocado, etc. It helps to keep the smoothie from getting too frothy.)

1/8 tsp stevia (unless the fruit is very sweet)

and 6 icecubes.

Blend again until smooth

Note: It doesn't matter what order you put the ingredients in the blender but I start with the greens and water because they take longer to blend up. Feel free to experiment. Add other seasonal fruit or juice.

    An important health issue, and I'm glad you brought it up. I try to eat healthfully and usually succeed. I'd like to see you discuss different types of nutriet-dense foods or research, etc. Fine lens on an important topic--thanks!

    I eat a lot of fruit raw, but I cook my veggies, try to steam them mostly. I love this lens.

    My hubby and I went to a raw food diet seminar and since then we make a green smoothie of kale, blueberries, apples and other greens. They are actually very good in that combo. I love them.
