Oooey Gooey Chewy Coconut Oatmeal Cookies
This coconut oatmeal cookie recipe is perfect for satisfying the hungry sweet tooth of the little munchkins in your home. These cookies are yummy crunchy sweet coconut oatmeal goodness in every bite.
If you have a few cookie monsters running around your house then you just might want to bake up a batch of these delicious oatmeal coconut cookies. They are a nutritiously crunchy sweet cookie treat.

The wholesome goodness of oatmeal and the chewy sweetness of coconut combine in this recipe to create the most delicious soft oatmeal cookie imaginable. Delicious, nutritious, and with the most delightful texture, these soft oooey gooey chewy oatmeal coconut cookies are guaranteed to have your family sneaking back for a second helping.
Oatmeal is wonderful because it is soluble fiber which actually lowers cholesterol, a great source of fiber, and absolutely delicious. As an added bonus this oatmeal cookie recipe is actually quite easy to prepare too.
A theme cookie jar can add a delightful charm to your kitchen decor.
Oatmeal coconut cookies-List of ingredients.
one cup white sugar
one cup brown sugar
two eggs
one teaspoon vanilla
one cup margarine
two cups oats
one cup coconut
2 cups flour
one teaspoon baking powder
one half teaspoon baking soda
one half teaspoon salt
TIPS:
Always use zero trans fat / non-hydrogenated margarine. It's the heart smart thing to do.
Preheat your oven to 350 degrees before beginning.
Blend together your wet ingredients with your sugars.
Cookie cutters come in a variety of shapes...
Add in your dry ingredients...
A cookie press makes decorative cookies easy...
Drop mixture by teaspoonfuls onto a greased cookie tray...
Puppy cookie jar....
Using a fork press cookie dough down just a wee little bit...
Pop your tray into the oven...
Cookies will need to cook for about 10 to 12 minutes at 350 degrees.
If you are making smaller cookies then twelve or fifteen should fit on the tray, but if you are using rounded teaspoonfuls of dough, then place only eight per cookie tray.
To insure a softer cookie never ever over cook. The longer a cookie is in the oven then the more moisture will be drawn out of them.
For this recipe ten minutes in the oven is quite sufficient to produce nice soft cookies.

- Came back to let you know I'm baking the last dozen as I type. So good! I'm a whole wheat flour girl, and I always use butter, so I changed them up a bit. Also added a cup of toasted almond slivers, chopped, and a cup of chopped craisins (dried cranberries). Yu-u-u-m-m-i-e-e. Thanks for the wonderful recipe!
