Oatmeal Gingersnap Cookies

Easy, yummy soft gingersnaps

Oatmeal Gingersnaps

- Serves: 3 dozen cookies
- Prep Time: 30 minutes
- Total Time: 1 hour
The recipe calls for quick-cooking oats, but we have used old fashioned oatmeal too. These are delicious! We like our cookies softer, so we bake them for a bit shorter time. If you like your cookies crunchier, bake a bit longer. Enjoy!
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 3/4 cup quick-cooking rolled oats
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup shortening
- 1/4 cup molasses
- 1 egg
- sugar
Instructions
Stir together first 7 ingredients. Blend in shortening, molasses, and egg; beat well with electric mixer for 2 minutes. Form into 1 inch balls. Roll in sugar; place 2 inches apart on greased cookie sheet. Bake at 375 for 8-10 minutes. Let stand 1 minute; cook on rack. Makes 3 1/2 dozen cookies.

- Right now my favorite cookie is one my sister developed the recipe for, she calls them "Sutherlands" after a man she worked with called them the perfect cookie. Actually, I just got a dozen in the mail from her and have been enjoying them along with banana bread she sent. I love both ginger snaps and oatmeal cookies, and your recipe combines them ~ what fun!
