Great family, great times and a great fondue.

I have been away and busy with trying to entertain my wife's sister and her husband and their youngest daughter who is sweet little sixteen.

They are also a family who had to leave Zimbabwe after living there all their lives. How sad. They moved to New Zealand and have made a new life there.

From the moment I first met them I always got on well with them and the two sisters are very close and as families we spent plenty of time together. Holidays, sporting matches, dinners, lunches, you name it. We hadn't seen them for nine years and that's nine long years.

They came to visit us and from the moment I picked them up at Dublin airport, we laughed and we laughed and we laughed. The wife didn't come with me to the airport as she had to prepare the meal and it was well worth waiting for. An old speciality of ours, a fondue, but not your normal Swiss one. This was our way of doing it and we wanted everybody to get back into the swing of things and our old way of life.

That's exactly what happened and all our family was there. That's all our families children. What a night we had and it was such a joyous occasion and also a great meal. Eat at your own time, at your own leisure and your choice of what you want.

I will do my best to explain this to you.

Why I'm like this with fondues

The beginnings

To understand something I have to go back in time. To the years when I was in college.

One day one of the guys was teasing me at tea time and he was trying to get an audience going. This started with, " hey spook how come you eat like a woman?" Slightly offended I replied, ( trying to be clever and in an exaggerated la di da voice,) " whatever do you mean?"

You don't eat like a man, we like big helpings at certain times, but you eat like my mother and now he started trying to act like a women and pretending to taste something, not liking it and trying something else all in gross pantomime. Whilst this was going on I was pretending to be mortally offended and going all huffy puffy. The rest of the lads were in full swing and having great laughs and passing comments. You eat like a women Spook, a little bit here and a little bit there, at all times of the day but you never have a big helping.

Actually I never had realised this, but he was quite right. One day when I was married my wife wanted to have some people over and didn't want to have a braai, ( barbecue ) but something along the same lines. So I suggested a fondue but along barbecue lines as they are great fun. That's when our fondue was born.

It stands to reason that one cannot have a fondue without a fondue set. I have chosen some which you might like and it is a question of your own taste.

The forks have different colours on the top so guests know which belongs to them otherwise you might end up taking someone else's food.

All in all it's great fun.

On this occasion we had chicken and steak. It is a bit time consuming preparing. All it entails is cutting up chicken breasts or steak into chunks which will load easily onto the fondue fork. The list of what you can do is almost endless, pork, cocktail sausages to mention just two others.

We also had garlic bread and a normal bread albeit a more fancy one, a salad as a side dressing with choice of sauce.

The wife made her own mushroom sauce as a condiment to the meat and Peri-Peri sauce and garlic sauce, both nice and hot. Then chips or in other places known as french fries.

Now no doubt vegans and vegetarians will be up in arms about this meal. But none of us are vegetarians. The thing to remember is that if you are one. Why not try a Fondue with your own vegetarian sausages and meat. I guarantee you, you will have fun. Go on and try it.

This was finished off with a crusty apple pie and ice cream.

Ready to eat

Fill your fondue set just above half with cooking oil.

Bring to boil on stove and transfer to dinner table carefully.

Underneath fondue fill attachment with methylated spirits and light with match.

Keeps the oil hot.

In Ireland can only get methylated spirits from chemist.

Enjoy your meal and cook to taste.

    I agree fondues are great fun - they have sort of gone out of fashion again but this may revive them. I AM a veggie and we have cheese fondues as well as cooking veggie saugages etc. Works just as well as meal. You only have to remember not to eat directly off the fondue fork - only did it once! Ouch

    Sharing fondue is such a great social acitivity, whether with friends or family. It is one where we can take out time chatting, eating, bantering, laughing, and sharing stories. My favorite is Swiss fondue which I make often. I have tried one with beef once with oil.

    I love fondue; both with oil for pieces of beef filet and horseradish dipping sauce and Gruyere cheese sauce for pieces of good French bread. Your lens prompted me to get our fondue pot out for our dinner tonight. I have lensrolled your great lens to two of my lens; one is for favorite family meals and the other is my fondness for fondue lens.

    A happy read! Reminded me of a fondue we had in Zim with prawns, which were very rare and very pricey - whenever anyone lost one off their fork someone would shout 'floater' and it became a free for all as to who nabbed the stray prawn. It was great fun and a miracle we didn't set the table on fire! Lee (can't remember my pasword!)
