Fat Free CORN CONFECTION!
Corny as it may sound, I really like candy corn! Especially when it is mixed with salty nuts. Every year I celebrate National Candy Corn Day on October 30th. That's NOT corny!
If you live somewhere besides North America you are wondering "So what is "candy corn"? Well,....
1. Candy corn is a sweet copy of dried corn kernels.
2. It's considered a "mellow cream," a name for a type of candy made from corn syrup and sugar that has a marshmallow-like flavor.
3. Although candy corn tastes rich, it's actually fat-free. That's what I'm talkin' about!

Candy corn has been around for more than 100 years. The Wunderlee Candy Company, began making the popular confection in the 1880s. The Goelitz Candy Company (now Jelly Belly Candy Company ---The Original Gourmet Jelly Bean! Click Here) started producing the confection in 1900 and still produces candy corn today.

Lack of machinery meant that candy corn was only made seasonally from March to November (Hey, that's 9 months out of 12. That's a long season in my book! But what do I know?).
Candy corn has remained unchanged for more than 100 years and is a favorite at Halloween.

Candy Corn Snack Mix:
1 cup candy corn
1 cup milk chocolate M&M's
1 cup salted peanuts
In a serving bowl, combine all ingredients. Store in an airtight container. Yield: 3 cups.

The Facts about candy corn:

Originally, candy slurry was cooked as a fondant (that's a 'sugar paste' to us non-candy making types) and poured into separate triangular-shaped molds designed to resemble kernels of corn.
Each color was poured into the mold separately by hand.
In other words, it took three passes to make the candy 3 colors!
In the beginning the kernels were allowed to dry before packaging.
Now, however, the process is entirely mechanized. Be sure to see the video below.

- Candy corn is an iconic candy, like Peeps and jelly beans at Easter, candy canes at Christmas ... it's not Halloween at my house without candy corn.
