Real Southern Cornbread and Other Southern Recipes

 

You can find many Southern recipes on the web. Unfortunately, many are not authentic Old South. Here are the most popular Real Southern Recipes plus Southern Cooking Techniques.

I found that trying to put entire recipes here takes a lot of space and makes it hard to find anything. So we will put full recipes here if they are short. All other full recipes can be found at www.olsouthrecipes.com . They are all free, of course.

Southern Black Eyed Peas 

A Traditional Southern Favorite

Black eyed peas are very simple to cook. At least they are if you follow this recipe.

It is an old Southern tradition to eat black eyed peas on New Years day. It is suppose to bring good luck for the coming year.

Ingredients
2 1/2 cups black eyed peas
8 cups water
1/2 table spoon salt
1/4 table spoon black pepper
1 medium size onion (whole)
1 slice bacon (un-cooked)
1/4 tsp garlic powder
1/4 tsp vinegar

Directions
Place all ingredients in large cooking pot on stove top burner on medium heat. Cook 40 minutes or until peas are tender. Do not allow water to evaporate entirely. If peas are dry they will burn quickly.
4 servings

Serve with Southern Fried Chicken or Pork Chops, greens and cornbread for a traditional Southern Meal.

You can also make a great bean dip with cooked black eyed peas. Just mash into a paste with a fork, add 1/2 teaspoon vinegar and 2 tablespoons of your favorite hot sauce (adjust amount according to how spicy you want the dip).

Cooking Real Southern Cornbread 

Real Southern Cornbread does not contain sugar. It is not cake. It is not dessert. It is bread to accompany a meal. Check the link at start of this paragraph for a real Southern recipe.

Recipe - Turnip Greens, Mustard, Collards 

Turnip greens are probably the most popular in the South, but mustard and collards are also cooked often. Turnip greens are distinctive, but mild tasting while mustard is more pronounced. Collards are the mildest in my opinion. You may use the same procedure below for any of these delicious dishes. They are really simple to cook. Here's how:

Ingredients:
1 batch (bundle) turnip, mustard or collard greens (enough to fill a large pot)
1 slice bacon
1 whole onion
1/2 tsp black pepper
vinegar (juice) from bottled hot peppers (served at the table)

1. Place large pot, filled with enough water to cover the greens about 3 inches, on medium heat
2. Place washed turnip greens, onion, salt, pepper and bacon in pot
3. Cook until tender, about 30 minutes.
Serves 4

At the table, serve with a bottle of hot peppers that each person can use to pour some of the pepper juice on top of the turnip greens to their own taste.

The above recipe is the basic Southern Style turnip greens. Wanna spice it up a little? Make it a little distinctive? Here are some optional ingredients you might want to try.

So, now we come to the real recipe for cooking turnip greens that I use.

To the above recipe, I add:
1 tsp molasses
1 tsp white vinegar
1 tsp garlic powder

Serve with fried Pork Chops or Chicken, fried okra and baby green onions or whole chunks of sliced, fresh onion.

Southern Cornbread Dressing (Stuffing) Recipe 

If you are cooking a turkey (or Sunday Baked Chicken) you absolutely must have Cornbread Dressing (Stuffing)

Deviled (Stuffed) Eggs Recipe 

Bettcha Can't Eat Just One!

Deviled Eggs

Ingredients
6 eggs, hard boiled
2 tablespoon mustard
4 tablespoon mayonnaise (adjust as needed)
1/2 teaspoon dill weed
1/2 teaspoon celery seed
1/4 cup chopped onion (optional)
1/4 cup FINELY chopped celery (optional, but it adds a wonderful crunch)
1/4 tablespoon salt (adjust to taste)
1/4 tablespoon black pepper
Dash paprika

Directions
1. Slice boiled eggs lengthwise
2. Carefully remove yokes from eggs into a mixing bowl
3. Add all ingredients EXCEPT paprika to egg yolks and mash into a paste with a fork
4. Gently, stuff the egg white halfs with the egg yolk mixture
5. Shake a light dusting of paprika on the top of the stuffed eggs

Makes 12 stuffed eggs

Mexican Cornbread and Tamale Pie 

Although they are not Southern, tamale pie and mexican cornbread are so good, we just had to include here.

While the tamale pie is a meal in itself and may be served alone, the mexican cornbread is great served with traditional Southern dishes. It goes very well with black eyed peas and all greens.

I have always thought of Southern food as cornbread, fried chicken and black eyed peas. I recently realized that Cajun food is also about as Southern as you can get...although a somewhat specialized type of Southern food.

I have collected a variety of good Cajun recipes and will be adding some of the best here. Or perhaps I should start a new lens?? Either way, I will post my decision here.

Southern Fish Fry 

Southern Fried Catfish

A Southern fish fry is traditionally done with catfish, but it doesn't have to be. Any firm fleshed fish will do. Just don't use a soft, flaky type fish. You will not get a good crunchy crust.
