I Love Onions!
Onions are the bad boy of the vegetable world. They stink, they make make you cry but my God they're delicious.
Salad Onions, scallions, spring onions, pickled onions, red onions, brown onions, shallots or white onions. I love them all.
It would probably be easier to compile a lens of savoury recipes that don't call for the trusty onion, so on this lens I've raided my repertoire for recipes that place onions centre stage.
I've also tracked down links, clips, pictures and information on our little round chums in paper jackets.
Enjoy but don't forget your breath mints.

I Never Harmed an Onion
Onions Are Good For You!
Onions are reputed to reduce the production of harmful bacteria in the colon, lower cholesterol, reduce blood pressure and lower the risk of stomach cancer.
Not only that the World Health Organisation state that onions can help treat poor appetite, coughs, colds and other bronchial disorders.
Oh and did I mention that they only contain 63 calories and 0.9g of fat per 150g so you won't be getting fat on onions anytime soon.

Onion Recipe Books
Stuffed Onions
6 large white onions - peeled - keeping the onion whole
1 tin Borlotti beans - drained and rinsed
4 slices bread
2 tablespoons fresh parsley
2 cloves garlic - peeled
2 tablespoons olives - pitted
Salt and freshly ground black pepper
2-tablespoons olive oil
1. Pre-heat the oven to 200ºF
2. Place the whole onions in a large saucepan of salted water. Simmer for 15 minutes or until soft.
3. Whizz the bread, parsley and garlic in the food processor until well combined. Add the borlotti beans and olives and briefly blend on pulse to keep the texture.
4. Drain the onions and cut in half vertically. Carefully remove the inner rings using a melon baller.
5) Spoon the filling into the onions.
6) Drizzle with olive oil and bake for 1 hour.
Serve with a dressed green salad.

Tofu and Chickpea Dopiazza
Dopizza translates as double onions
1/2 lb Marinated Tofu Pieces
1 can chickpeas (drained)
2 medium onions, thinly sliced
2 tablespoon vegetable oil
4 cloves of garlic crushed
1 tablespoon coriander
1 tablespoon ground cumin
1/2 teaspoon ground turmeric
1/2 inch ginger finely chopped
1 tablespoon chili powder
1 teaspoon black pepper
1/2 teaspoon salt
1 can chopped tomatoes (undrained)
1.Fry onions in a large pan until they are golden
2.Mix the garlic with the spices and a little pepper. Add the spice mixture to the pan, fry spices with onions for 1 minute taking care not to burn them.
3.Add the tofu and stir together for 1 minute.
4.Add the chopped tomatoes and chickpeas.
5.Add water in pan as required. Bring to boil, cover and slowly simmer for 30 minutes until the sauce has thickened.
Serve with nan bread or rice.

9 medium onions, thinly sliced

1 tablespoon butter (or vegan substitute)
1 tablespoon unbleached flour
1/4 teaspoon cayenne pepper
1/2 teaspoon of marmite (yeast extract)
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
4 cups water
4 cubes vegetable stock
1 tablespoons tomato paste
French bread, toasted
Grated Gruyere Cheese (optional)
1. Fry the onions slowly in the oil and butter until softened.
2. Add flour and seasonings to onions and stir well. Reduce heat and continue to fry low heat until onions turn a rich golden color, about 1 hour or more.
3. Combine water, vegetable stock, tomato paste, marmite and vinegar in separate bowl.
4. Add the stock to onions slowly, stirring constantly. Simmer slowly for about 35 minutes.
5. Serve in individual bowls with gruyere topped French bread on top.

Freaknoodles French Onion Soup
I've yet to try this recipe but it looks mouthwatering and a good deal less complicated than my own!

1 1/2 tsp. black pepper
16 Tbsps brown sugar
8 Tbsps Sherry vinegar
16 Tbsps White Wine
1. Heat the butter in a large pan
2. Add the onions, salt, pepper and sugar, stirring well.
3. Cover the pan and lower the heat to the lowest possible setting, simmer for about 45 minutes, stirring occasionally.
4. Add the Sherry vinegar and white wine, increase the heat slightly and continue to simmer for another 50 minutes or so or until mixture has the texture of a thin spreadable jam.
Allow to cool and refrigerate in a covered dish or jar.

2 large chopped boiled potatoes
1 Large Onion, finely sliced into rings or half moons
2 cloves garlic crushed
1/2 inch piece of ginger finely chopped
1 tsp chili powder
1 tsp sugar
200g Yogurt
2 tsp Garam masala
1 fresh chilli deseeded and finely chopped
Marinade the potatoes and onion in the garlic, ginger, chilli powder, yogurt, sugar, salt and 1 tbsp vegetable oil for 2-3 hours.
Heat oil in a pan over a low heat. When the oil is hot add the onion, potatoes and marinade. Simmer for
20-25 minutes or until piping hot.
Just before serving add the garam masala and mix thoroughly to ensure the flavour is evenly distributed.
Garnish with Lemon wedges and fresh chopped coriander. Serve with rice or nan.

1 medium red onion, thinly sliced
10 Tbsps red wine vinegar
4-6 Tbsps water
1 tablespoon sugar
1/4 teaspoon nigella seeds
Salt and Fresh Ground Black Pepper to taste
1. Separate the onions into rings, add to cucumber slices.
2. Dissolve the sugar in water, add the wine vinegar, mustard and seasoning.
3. Cover the cucumber and onion in the dressing and allow to marinate for roughly an hour to let the flavours mix.
1 medium red onion, thinly sliced

- I fried them in oil, and make sandwich with a special cheese called hellim. I dont know whether or not other other people think it is disgusting. But, I really like that taste :)
now and then, I am a onion lover :D
