Almond Cookies

Often when I see items on sales at my grocery store and I know I will be soon baking up a storm, I will purchase items ahead of time. It just so happened I found almonds on sale and purchased a bag. For whatever reason I love almond cookies but I wanted a unique tasting cookies using almonds and orange (yes, I found oranges on sales also and purchased them.) So I started to look in my cabinets for other ingredients and off to the experimenting table I went. But this time I remembered to write down my ingredients and measurements as I went along and this is the recipe I came up with.

In this batch I did dust the cookies with a powdered sugar, but now I wish I would left that step out. Not because they do not taste good, but because powdered sugar has a way to get all over the place when you are eating them. This recipe is not over sweet, but has a delicious orange almond taste that is not over powering but instead a delicious light taste of two very good ingredients orange and almond.

The Texture

As I was mixing up this recipe, the texture was like velvet in the bowl. It more or less is a drop cookie but what I did was place a small dish of flour by me and pressed down the drop cookies so they would be flat. I am not a fan of thick cookies so I choose to do it this way, if you like a thicker cookie than do not feel like you need to flatten it. Also the cookies will not rise a lot because I only used a small amount of baking powder.

On one of my other recipe lens I spoke about an extract called: Fiori di Sicilia which is one of the most amazing extracts that I have ever used. I love it! On the King Author site they explain that Fiori di Sicilia which means "Flowers of Sicily" (which is where my grandmother and grandfather were born) and it has this beautiful combination of citrus and vanilla with a pleasingly floral aroma. Without a doubt, this extract taste as beautiful as it smells. I am 100% hooked on this stuff and the best thing besides its smell and taste is it ONLY takes a tiny amount to get the full effect. So a bottle will last a very long time. The next time I make these cookies I will for sure use a tiny amount of the Fiori di Sicilia extract because I bet it will only enhance the taste even more.

The nutrition of Almonds

I did a little research about the nutrition of almonds and was amazed about what I found. A research showed that there was a 50% reduction in the risk of a heart attacks for those who ate nuts at least five times a week.

In another study almonds added to a diet helps to lower blood cholesterol levels.

One ounce of almonds contains 12% of your daily allowance of protein, no cholesterol, vitamin E and antioxidants. The fat in a almond is called monounsaturated is also known as a good fat.

Almond contain minerals such as magnesium, phosphorus and zinc and healthy fiber. It also contain calcium and folic acid.

Approximately one ounce of almonds contain as much calcium as 1/4 cup of milk.

I have recently started using Almond Milk DAILY and not only am I 100% hooked on it, but after researching almonds knowing the health benefits of it makes it even that much enjoyable!
