What's So Great About Brisket?
My focus is on beef brisket braised with tomato chutney, but you can apply any number of vegetables, spices, herbs and liquids to brisket, add moist heat, and end up with an amazing meal. The variations are truly endless and are limited only by your imagination, or your palate.
Brisket--lots of beefy taste...
...for a small price tag
Brisket comes from the front of the cow, down behind its shanks on the chest. Since these muscles do a lot of work, they can be pretty tough. The secret to cooking brisket is to keep the heat low and let it cook for a long time. Low, steady heat and time work together to help break down the tough connective tissue in brisket, turning into lip-smacking, finger-licking gelatin. Since the brisket releases all this lovely gelatin, it makes perfect sense to catch it in a pot (cook the meat in a covered vessel as opposed to on a grill) and use it to make a flavorful, beefy sauce for your meat.Notice the heavy graining running vertically in the picture to the right. Other cuts that show this same sort of graining include flank steak and skirt steak.
Beef Brisket with Green Tomato Chutney
The Perfect Brisket for a hearty winter meal

I came up with this recipe to use up about 1 1/2 cups of leftover green tomato chutney that I made a couple of weeks ago. It turned out so well that I wanted to share it with everyone.
You can eat this immediately, but it is so much better reheated the next day. If you can't decide, eat some as soon as it is ready and eat more the next day!
Ingredients
- 1-4 lb beef brisket
- trimmed of most of its fat
- kosher salt and freshly ground black pepper
- to taste
- 1 Tbsp curry powder--your favorite blend
- 1 medium onion
- finely sliced
- 1 1/2 cups green tomato chutney (scroll down a little for recipe)
Instructions
Liberally salt and pepper both sides of the brisket.
Place 1/2 of the sliced onions in a large, heavy Dutch oven, then place the brisket on top of the onions.
Sprinkle the curry powder on top of the brisket.
Spread the chutney on the meat in a thick layer.
Arrange the rest of the onion slices around the meat.
Cover tightly, and braise in a 325F oven until meat shreds easily with a fork, about 4 hours. No additional liquid is necessary.
The onions and tomatoes will have cooked down, and the meat will have released a lot of its juices making for a very flavorful sauce.
At this point, you can either skim off the fat and serve, or you can refrigerate the whole thing in a large container overnight (keep the meat in the sauce). The next day, it will be very easy to lift off any fat that has solidified in the container. Reheat over medium-low heat in a covered Dutch oven.
Remove the meat from the pan and cut off any excess fat. Cover with foil.
Skim off as much fat from the sauce as you can/want to. You can serve the sauce as-is, or you can do what I did. Either put the sauce in a blender--careful, blending hot liquids can be hazardous--and blend until smooth or use a stick blender (immersion blender) to puree the sauce.
If you choose to use your blender, leave the pouring spout open and cover with a towel. Do not fill blender container more than halfway with sauce. Start blending on low and increase speed to achieve your desired smoothness.
That's it! Serve the meat, sliced across the grain, with buttered noodles and sauce over all. Or with rice. Or with steamed vegetables. This pairs well with most side dishes, and the slightly sweet, tangy sauce is absolutely mouthwatering.

How to Make Green Tomato Chutney
for making this brisket and for so many other reasons
Green tomatoes are magical. They are tart and tangy, firmer and less sweet than their mature cousins, red tomatoes. We found ourselves with a boatload of green tomatoes at the end of November (our garden was generous this year!) and needed to use them or lose them. I came up with this flavorful chutney and have found many uses for it.
Green Tomato Chutney
- as many green tomatoes as you can get your hands on, washed and cut into chunks (or left whole if you're using cherry tomatoes)
- about 1/2 as much white onion as you have tomatoes, by weight, diced
- brown sugar, to taste
- vinegar, to taste (use whatever light-colored kind you like. I used apple cider vinegar)
- salt and pepper, to taste
- whole mustard seed, about 1-2 teaspoons, or to taste
- allspice berries, to taste (I used three)
- Chinese five spice powder, about 1 teaspoon, or to taste
- coriander seed, ground, about 1 teaspoon
- 1 cinnamon stick
Bring everything to a boil over medium heat. When skins on tomatoes begin to burst, mash with a potato masher. Turn down the heat and let simmer until any liquid left is very syrupy.Taste, and adjust seasonings as necessary. Use chilled as a condiment or as an ingredient in the brisket or anything else yummy you can think of.
