What's So Great About Brisket?

Beef brisket is a relatively cheap cut of meat. If not handled properly, brisket can be tough and stringy. If you know the best cooking methods to apply to beef brisket, though, you are in for some seriously good eating!

My focus is on beef brisket braised with tomato chutney, but you can apply any number of vegetables, spices, herbs and liquids to brisket, add moist heat, and end up with an amazing meal. The variations are truly endless and are limited only by your imagination, or your palate.

Grass-Fed Beef Brisket from Rare Earth Farms Brisket comes from the front of the cow, down behind its shanks on the chest. Since these muscles do a lot of work, they can be pretty tough. The secret to cooking brisket is to keep the heat low and let it cook for a long time. Low, steady heat and time work together to help break down the tough connective tissue in brisket, turning into lip-smacking, finger-licking gelatin. Since the brisket releases all this lovely gelatin, it makes perfect sense to catch it in a pot (cook the meat in a covered vessel as opposed to on a grill) and use it to make a flavorful, beefy sauce for your meat.

How to Make Green Tomato Chutney

for making this brisket and for so many other reasons

Green tomatoes are magical. They are tart and tangy, firmer and less sweet than their mature cousins, red tomatoes. We found ourselves with a boatload of green tomatoes at the end of November (our garden was generous this year!) and needed to use them or lose them. I came up with this flavorful chutney and have found many uses for it.

Green Tomato Chutney


  • as many green tomatoes as you can get your hands on, washed and cut into chunks (or left whole if you're using cherry tomatoes)

  • about 1/2 as much white onion as you have tomatoes, by weight, diced

  • brown sugar, to taste
  • vinegar, to taste (use whatever light-colored kind you like. I used apple cider vinegar)

  • salt and pepper, to taste

  • whole mustard seed, about 1-2 teaspoons, or to taste

  • allspice berries, to taste (I used three)

  • Chinese five spice powder, about 1 teaspoon, or to taste

  • coriander seed, ground, about 1 teaspoon

  • 1 cinnamon stick
Bring everything to a boil over medium heat. When skins on tomatoes begin to burst, mash with a potato masher. Turn down the heat and let simmer until any liquid left is very syrupy.

Taste, and adjust seasonings as necessary. Use chilled as a condiment or as an ingredient in the brisket or anything else yummy you can think of.

Braise Brisket in a Crock Pot

Crock Pots are very Versatile

There is no need to heat up your oven for hours at a time. Simply throw (or place, rather) all of your ingredients into your crock pot, turn it on and walk away. In six to eight hours, you are good to go for dinner.
