Oven Roasted Vegetables

Easy and very flavorful recipe that is sure to please!

Easy is an understatement here, I make this when I'm not really in the mood to cook but I need to fix something good for dinner. If you can chop, drizzle, mix and spread then you can do this.

If you love to experiment with recipes then this is perfect for you - its so simple to switch up the flavors with your seasoning choice.

Try oven roasted vegetables tonight and see what you think.

Ingredients

This is the basic list... add to it as you see fit.

3 zucchini
3 summer squash
olive oil to drizzle
Lipton savory herb soup mix

Other ingredients to add variety to your oven roasted vegetables.

It is so easy to add things to this recipe!

For a little color, and more flavor, add red peppers.

If you want it a little more hearty, add small new potato wedges.

If you love onions, toss those in too.

For a traditional touch, add carrots and celery.

Chop your vegetables.

This is what you do. (Thin slices are best.)

*Simply cut up your vegies and lay them out on a baking sheet.

*Drizzle with olive oil, enough to get them all coated and then sprinkle on the lipton dry soup mix.

*When you have all the pieces coated with seasoning, spread it all out evenly.

*Pop the baking sheet in the oven at 400 degrees for about 20 minutes or until golden.

YUM!

Most people don't eat enough vegetables.

And that's a shame because our bodies need the nutrition from colorful vegetables to keep us healthy and fit. As a society, we eat way too much prepackaged foods loaded with preservatives and ingredients I cannot pronounce.

With this recipe, it is easy to fix yummy veggies, and you can limit the seasoning or pile it on, at any rate you're getting some goodness in there!

You can do so much with this recipe!

I like Lipton's Savory Herb mix, but you could try so many seasonings for this recipe. Lipton's onion soup mix or beefy onion are both yummy too. Or try with Old Bay seasoning or even just plain ol' salt and pepper.

The ways you could tweak this to your own taste are truly endless and I hope you'll try fixing your own oven roasted vegetables!

    I love squash and zuchinni with olive oil - I've never had it with soup mix though but it sounds incredible!!!!!!!! I love everything squash, everything! I once went to a wedding and ate nothing but plates full of squash because they made it so wonderfully. I never touched a bite of the prime rib. Ha Ha

    Nice lens! 5* from me. I can't approve it for membership in Skin Care for Women because it doesn't have enough relevant content, but I'd be happy to consider any other lenses you have on skin care, women's health or beauty.

    This is great. I do the Liptons with potato wedges all the time (they're delicious!) but I never thought about doing it with vegetables. I love the Periodic Table of the Vegetables poster ~ too fun! :o)
