The Pacific sardine is a member of the herring family, found in the Pacific Ocean from the Gulf of California in Mexico to southeastern Alaska.

Pacific sardines are available fresh or frozen whole. They may also be available as fillets or skin-on and bone-in. Salted, smoked or canned products are also popular.

Sardines are often grilled, especially over hardwood charcoal as their soft, oily flesh cooks well with direct heat. They may also be baked, broiled, pan-fried or hot-smoked.

Linear bony ridges on its gill cover distinguish Pacific sardines from other members of the herring family. The species can grow to around 14 inches in length and weigh up to one pound.

Commercial Landings of Pacific Sardines

About 25% of U.S. wild caught pacific sardines are eaten domestically. The bulk of the landings are usually frozen and exported, with most going to Japan and Australia. Several gear types have been used in the Pacific wild sardine fishery including seines, gillnets, and traps. Seiners use large nets to encircle the fish, which are then drawn together into a "purse" so that the fish cannot escape. Gillnets are fished closer to shore. Sardine traps are large enclosures constructed of webbing supported by a floating frame, used to capture fish to be held for the fresh market.
