Sooner or later, everything ends up on a pizza. Why not lobster?

This recipe for lobster pizza makes a delicious appetizer, or main course. Who would have thought pizza topped with lobster meat would taste so good. You won't believe how delicious this pizza is once you try it. I never would have thought lobster would taste so good as a pizza topping. It was by accident when I made my first lobster pizza. I prepared my dough, and all of my other ingredients, but when I reached in the fridge to grab what I thought was chicken, I grabbed lobster chunks from the night before. Thank god for leftovers.

My lobster pizza recipe was inspired by other pizza's topped with lobster that I have tried in the past. They were very delicious and I thought with a little creativity, I could make my own delicious recipe to share with others. It's also great as an appetizer or a main course.

For pizza's like this one, I like to use flat bread, or pita bread. Flat bread or pita bread works great for a thin crust, without the hassle of making a pizza dough from scratch. However, if you prefer to use a traditional hand tossed dough for this recipe, it will still taste delicious. This lobster pizza can be made as main course, or divided up and served as a delicious snack. It also tastes great served cold, so even if you like eating cold pizza leftovers like I do, this will definitely satisfy your craving.

I tried to make this recipe as simple as possible, so it takes less time to prepare, and not smothering the lobster pizza with too many ingredients is what makes this recipe so good. Hopefully you will enjoy my lobster pizza recipe as much as I have sharing it with you.

Ingredients:

1ea. 8-10" flatbread
1 roma tomato
1tablespoon of grated parmesan cheese
1/4 cup of goat cheese
6 onces lobster meat (1/2"chunks)
1teaspoon of fresh basil (chopped)
1/8 cup of olive oil
1teaspoon of chopped garlic

Directions:
1. Pre-heat oven to 375 degrees
2. In a small bowl, add the lobster, olive oil and chopped garlic, (mix well enough to ensure the lobster is glazed with oil & garlic)
3. Slice the roma tomato very thin, squeeze out juice, and spread out slices evenly on the flatbread
4. Distribute the glazed lobster evenly on the flatbread
5. Top with the goat cheese, parmesan and basil
6. Cook for 10-15 minutes at 375 degrees
7. Drizzle with lemon juice
8. ENJOY!

Lobster Pizza

I was in a bit of a hurry when I was first preparing this pizza, so I did not realize I was using lobster for my main topping. But when this lobster pizza came out of the oven piping hot, it was anything but an accident. It was the most delicious pizza I have ever tasted. So today you are in for a real treat, because I am sharing this tasty recipe with you. I can't think of a better way to eat lobster or pizza, and everybody loves pizza and lobster, so lets make a lobster pizza!
