Chocolate chip cookies are a real treat, but when you follow a Paleo diet, the normal ingredients won't work. But don't despair! With a little imagination and substitutes for some of the ingredients you can still enjoy your chocolate chip cookie cravings.

A little bit about this Paleo part of the cookies
Why is there Paleo in front of this cookies recipe. The simple fact is that I follow this diet (although I consider it to be more of a lifestyle) and thus have to adhare to its rules. In short, the Paleo diet consists of eating fresh fruits, vegetables, meat, fish, eggs and nuts and leave out dairy, grains, sugars and all artificial additives (such as sweeteners). Because there are some restrictions, it's somewhat difficult to come up with substitutes for popular foods such as chocolate chip cookies because the usual recipes contain flower (grains) and sugars. This recipe however substitutes those ingredients with others.

Ingredients
In order to prepare the Paleo Almond Chocolate Chip cookies you'll need the following ingredients:

- 4 ounces (100 gram) almond flower
- 1 tbsp of almond butter or paste
- 1 tbsp of honey
- 1 teaspoon of vanilla extract
- 1 tablespoon of ginger
- 2 ounces (50 grams) of crushed dark chocolate (at least 70%)
Preparation
- Serves: 1-2
- Prep Time: 5-10 minutes
- Total Time: 15-25 minutes
Preheat oven to 375 degrees Fahrenheit (200 degrees Celcius).
Add all ingredients to a bowl and stir until completely mixed. Dough should have consistency but shouldn't be runny.

Using a tablespoon, turn dough onto a baking tray or sheet of wax paper. Flatten into cookie shape. Put into oven and bake until dry and browned, about 15-20 minutes.

Let them cool off and enjoy!

Recipe will be enough for about 5 cookies. Multiply ingredients for larger batches.
