A Cheap Substitute for Pancake Syrup

When I was a child, my grandmother used to make this syrup for my pancakes. It tastes a lot like the table syrups you can buy at grocery store.Dissolve a cup of brown sugar in 3/4 cup water over medium heat. Bring to a boil, then simmer for about 15 minutes to thicken a little bit. Be careful not to let it boil again and don't let it cook too long and turn to candy.
If you do not care for the flavor, use this to stretch maple syrup or add a little maple flavoring.
Another Substitute for Maple Syrup

Combine 1/2 cup water, 1/2 cup brown sugar and 1 cup light corn syrup. Heat this mixture, stirring until all sugar is dissolved. Add a pat of butter and one to two teaspoons of maple flavoring to taste.

Fresh Fruit Topping for Pancakes

- Serves: makes 1 1/2 to 2 cups
This pancake topping, made with fresh fruit, came from the Laurel's Kitchen cookbook. This is one of my favorite cookbooks, full of nutritious and economical recipes with family appeal.
Ingredients
- 1/4 cup raisins
- 1/4 cup boiling water
- 4 ripe bananas
- 1 orange
- peeled
- juice of 1 lemon
Instructions
Soak the raisins in the boiling water. When the raisins are plump, put all of the ingredients into a blender and puree until desired consistency.
Serve immediately. This sauce will not keep well.

- I like blueberry or maple syrup best. Sometimes I use both. But I haven't made pancakes in years.

- This is weird, but the only pancake topping I really enjoy is plain old butter. I never cared for the sweetness of the syrup.

- My husband's grandfather was diabetic and not supposed to have maple syrup. Being franco-americans, they had crepes for breakfast. When the grandmother wasn't looking, D's grandfrather would take a big swig out of the maple syrup bottle.
We visited some of his distant cousins in New Brunswick two years ago. They gave us some of their homemade maple syrup. What a treat!
