How To Cook Pancit Molo...(what on earth is "PANCIT MOLO?")

Filipinos are fond of food, not just eating but also cooking them. It seems that there is nothing in this world that Filipinos can't cook. You give them chicken, they will cook everything except for the feathers (of course, silly!) That is why, Filipinos are famous for their expertise in cooking all over the world. Even the chief cook or the chef at the White House is a Filipino, Cristeta Comerford. And in several parts of the country, there are countless chefs with great taste and love for cooking especially the "Ilonggos". Ilonggo is the term for a person who lives in the Visayas area of the Philippines particularly in Iloilo, a city which is 45-minute plane ride away from Manila. For sure, many are now familiar with the most famous beach island in the world - Boracay! Boracay is 6 hours away from the city of Iloilo- the city of Ilonggos, the city famous all over the world for its yearly festival- the Dinagyang Festival!

Now, we won't be talking about Dinagyang or Boracay here. But, if you happen to pass by Iloilo in going to Boracay, you might come across with a very delicious meal which is called Pancit Molo. Have you heard about it? For sure, most of you, dear reader and fellow Squid masters, are not familiar with it.

So, please allow this fellow Squid master of yours write about how to cook this very delicious, very tasty, very extra hot (as in hot! hot!), savory Filipino dish called THE PANCIT MOLO!

Here Is How To Cook Pancit Molo (good for 20 persons)

"Pancit" (pronounced as pan-seat) is a Filipino word for Pasta but don't be surprised! There's no noodle or pasta in here!

THE INGREDIENTS:

1 tablespoon vegetable oil (or you can use any kind of cooking oil like olive oil or something)
1 clove garlic
2 bulb of onions
2 strip of onion leaves or kutsay leaves
1/2 kilogram of shrimp
1/2 chicken meat
1 kilogram of pancit molo
3 liters of water
salt (according to taste)
black pepper
seasoning (soy sauce will do)

THE PROCEDURE:

1. Saute garlic, onions, chicken (shredded) and shrimp (without the shell) in cooking oil.
2. Put water until it becomes broth and the shrimp and chicken are already cooked
3. Let it boil for 20-30 minutes under moderate fire
4. Mix the ingredients well.
5. Put seasoning and iodized salt (to taste)
6. Put 1 kilo of Pancit Molo and cover the casserole and let it simmer for 10 to 15 minutes until Pancit Molo balls are tender and cooked. You can easily see if the "Molo balls" are already cooked when they start to rise above the broth.
7. Put black pepper and kutsay leaves or onion leaves.

8. And then, the delicious part, SERVE IT! Remember, it's best to serve it hot!

Optional:
While eating, you can put either or all of these: fried garlic, seasoning (like soy sauce)

ENJOY!!!!

If you want to go to Boracay, pass by Iloilo and help yourself with the delicious Pancit Molo!

But as always...be careful with the toxins!

Pancit Molo is one of the finest, simple yet delicious Filipino dishes but mind you, it has also lots of toxins just like any other food today. These toxins can make you sick but the question is, can you live a life without food? The only way to prevent toxins from getting into your system is to die, right?

You can't do away with toxins, but you can do something about it! You can still enjoy good food like Pancit Molo or any other food that you love just as long as you don't forget how to clean your body from the inside and pair it with lots of exercises and healthy and balanced diet!

So, enjoy Pancit Molo while you can and live your life to the full!!!

    I am from Iloilo and just love pancit molo. I can eat that everyday but have not cooked it. I will have to start and learn.
