How to make Paradise Pineapple Pie
Tired of the same ol' pie recipes to make for the next potluck dinner or for the holidays? So wasn't I! You can only make so many of the traditional pie recipes before you start exploring what ELSE is out there. So, yesterday I went to my sitting room and started digging through some of my older food magazines and cookbooks. Within minutes I found PARADISE PINEAPPLE PIE and I was hooked! I was even amazed to find that I already had all of the ingredients at the house and all I had to do was put an apron on and work my magic. It is a quick-fix recipe and it only takes about 20 mins. or less to prepare and no cooking required. Even your kids and grandkids can help you make this fun pie recipe! This pie recipe is enough to make 2 pies. So, you can bring both to your next church supper OR you can keep one home to treat yourself to this yummy goodness. Now, then, ON to the RECIPE!

Paradise Pineapple Pie
THE RECIPE
Ingredients
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple, drained
1/3 cup lemon juice
2 (8 inch) graham cracker crusts
1 cup flaked coconut, toasted
Directions:
Place the milk in a bowl; fold in whipped topping. Add pineapple and lemon juice; stir for 2 minutes or until slightly thickened. Pour into crusts. Sprinkle with coconut(preferably toasted). Cover and refrigerate for at least 2 hours. You can also garnish with a couple of slices of pineapple on top with a sprig of mint.
