What does Parsley, sage, rosemary and thyme mean to you?
" Are you going to Scarborough Fair,
Parsley, Sage, Rosemary and Thyme " is the opening of an old English folk song which I knew in my childhood. My Godparents lived in the seaside town of Scarborough, and on car journeys to see them we would sing this song.
I have very fond memories of Scarborough.
The song, Scarborough Fair, has followed me around all my life. Martin Carthy revived the song and I heard him sing at University folk clubs back in the 1960s. Bob Dylan used the tune and words too, but it was Simon and Garfunkel who sent Scarborough Fair around the world with the theme music to the movie The Graduate.

Scarborough- a great town on the East Coast of England
Scarborough Yorkshire, England- where it all started
I have been visiting Scarborough all my life. My father's best friend from the Airforce in WW2 lived in Scarborough. He was my godfather, and his family were like aunts, uncles and cousins to me. A visit to Scarborough was one of my childhood all time favorite treats.Was there a fair at Scarborough, just like in the song? Well yes, there was. Scarborough fair dates back hundreds of years.

Parsley, Sage, Rosemary and Thyme, the classic Album from Simon and Garfunkel.
The original Parsley, Sage, Rosemary and Thyme album.
In 1968 the songs from the Parsley, Sage, Rosemary and Thyme album were used as the sound track for the film The Graduate ,the Mike Nicholls film starring Anne Bancroft in which Dustin Hoffman first gained fame. Paul Simon alone was attributed as the author of the song Parsley, Sage, Rosemary and Thyme in the copyright for the movie, and Martin Carthy was very unhappy about this injustice.
In recent years the two have been reconciled, with Martin Carthy joining Paul Simon to perform the song in 2000 on stage in London.
I bought all of Simon and Garfunkel's albums- they were the soundtrack to many happy memories for me during the late 1960s and the 1970s.
Parsley, Sage, Rosemary and Thyme, as sung by Sinom and Garfunkel is still, in my opinion, an absolute classic!

Martin Carthy- folk legend- brought Scarborough Fair to the greats of music
Revived by Martin Carthy in his 1965 album, Parsley ,Sage, Rosemary and Thyme has since stormed the world
From Martin Carthy's first album in 1965, right down to today, Martin Carthy has been a pivotal figure in the folk revival. Awarded an MBE by the Queen for his services to music, Martin Carthy has played as a solo artist and with other great folk muscians for 40 years, and is still going strong.
He has played in Steeleye Span, with Dave Swarbick on many occasions, in the Albion Band, Brass Monkey and other great collaborations.
I last saw Martin Carthy in 2009 in Waterson;Carthy- a great folk combination, with his wife, Norma Waterson, herself from folk royalty, the Waterson family, their daughter Eliza Carthy, and Saul Rose.
Martin Carthy was very unhappy when Paul Simon alone was credited with the copyright of Parsley, Sage, Rosemary and Thyme in 1968. This rift has now been healed.
Scarbrough Fair, Parsley, Sage, Rosemary and Thyme has now been recorded by over 50 artists- thanks to Martn Carthy for first bringing Parsley, Sage, Rosemary and Thyme to a worldwide audience

Bob Dylan's second album was influenced by Martin Carthy's work
The Freewheelin' Bob Dylan draws on old English folk songs.
Bob Dylan drew on these folks songs in his early writings, and used elements of Scarbrough Fair, Parsley, Sage, Rosemary and Thyme, for his song "Girl from the North Country", including the famous line,"Remember me to one who lives there, she once was a true love of mine"The tune for Girl from the North Country is basically the same as Scarborogh Fair, Parsley, sage, rosemary and thyme.
Bob Dylan released Girl from the North Country in 1963 as the second track on Dylan's second studio album, The Freewheelin' Bob Dylan. Bob Dylan later recorded the song as a duet with Johnny Cash in 1969, and the new version the first track on Nashville Skyline.
I loved all the early Bob Dylan albums, but never bought any of them myself.
However, when I met my future husband in 1972, I found that he had all the Bob Dylan albums in his collection, so when our album collections were married in 1973, we had a really great album library!

My Herb Garden- featuring Parsley, sage, rosemary and thyme.
One of my favorite pastimes now is tending my herb garden .
Parlsey, sage, rosemary and thyme , are just four of the many herbs I grow.
Our home White Moss House ( owned by the poet William Wordsworth) has also been run by us as a famous small hotel and restaurant over the years. In tribute to one of our favorite songs, Parsley, Sage, Rosemary and Thyme, my husband, who is a Mater Chef of Great Britain, used to serve "Lakeland rack of spring lamb with a herb crust of parsley, sage, rosemary and thyme" to his appreciative guests. We are now semi retired ,mostly operating as bed and breakfast, but still serving dinner on special occasions.
We still use parsley, sage, rosemary and thyme as a herb crust for lamb, chicken breasts, and to sprinkle on oven roast potatoes.
Our herb garden today has over 15 different herbs .

- Scarborough fair was one of the first songs I taught myself to play on the keyboard. I came accross this page and I think it is wonderful and I am going to be singing that song to myself for a while now lol! Great page, well written, some lovely photos and I enjoyed it! :)
