Paruppu Usili is a traditional South Indian curry, particularly famous in Tamilnadu. Paruppu Usili is a healthy dish prepared using lentils and vegetables. Beans, cluster beans, plantain flower, cabbage and potato are the vegetables generally used for this recipe. Paruppu Usili goes well with rice as a side dish. Beans Paruppu Usili Recipe

A Nutritious Lentil Curry

Paruppu Usili RecipeIngredients:
Toor Dal (split pigeon peas) - 1 cup
Channa Dal (Bengal gram) - 1 cup
Red Chili - 5 to 6
Turmeric Powder - 1 tbsp
Green Beans - 500g
Oil - 5 tbsp
Salt to taste

For Seasoning:
Mustard Seeds - 1 tbsp
Urad Dal(split black gram) - 1 tbsp
Curry leaves - 5 to 6
Hing - 1/4 tbsp

Steps:
  1. Soak the dals for 3-4 hours, or preferably overnight.
  2. Grind the dals along with red chili, turmeric powder to form a coarse mixture.
  3. Chop the vegetable, and boil it for 10 minutes. Then drain well and keep aside.
  4. Heat oil in a frying pan, and add mustard seeds, urad dal and curry leaves.
  5. Add the dal mixture, and cook it covered for 5 minutes.
  6. Open the lid, and stir the mixture.
  7. Add boiled beans and salt as per your taste.
  8. Stir it for few more minutes, and the delicious paruppu usili is ready.

Quick Tip

If you want to use less oil and make the dish even more nutritious, you can cook the ground dal mixture in pressure cooker for 5 minutes. Then you can just fry the cooked dal and boiled vegetables for few minutes in the frying pan.

    Looks delicious - but living in Norway I am not able to get the different kind of dal. Could I use red lentils or mung beans, for example?
