A is for Asparagus, an ingredient in this complete meal pasta salad, providing you all food groups in one tasty dish. Best of all, it's sure please a crowd...or a family.

I had no name for this salad at first. I used to say "we're having that pasta-bean-asparagus salad, you know, the one that has feta cheese and olives in it".

Now I won't have to do that anymore thanks to the help of some wonderful people who have been adding ideas to name the salad below. You'll find more information about that below.

I challenge you to make this pasta salad with all of it's delicious ingredients for your next meal, picnic or barbecue.

How This Salad Got it's Name

The ABC Fiesta Pasta Salad

When I first introduced this salad, I asked a group on Squidoo to suggest names for the salad below.

By combining the different ideas provided, I came up with the title for this delicious pasta salad above...thank you so much!

My Salad Tongs Keep Breaking

I'm looking for a sturdier pair

I could easily afford these Oneida Stainless Steel Salad Tongs if I had saved all the money I've spent on plastic salad tongs over the past couple of years. They keep breaking, so these salad utensils are a much better choice.

Following is a longer more colorful version of the recipe with additional tips and more explanation

Ingredients:

1) 1/2 Box of Rotini
2) 1 pkg Frozen Broccoli Florets
3) 1 Can Red Kidney Beans
4) 1 Small Can Sliced Black Olives
5) 1 Can Asparagus
6) 1 Ripe Avocado
7) Seasoning and Spices
8) 1 Cup Crumbled Feta Cheese
9) 1/4-1/2 Cup Fat Free Italian Dressing

1) Pasta - Rotini

And what "el dente" means

Boil 1/2 a box of Rotini pasta until it is "el dente", as instructed on the box.

Remember when a box of pasta was always 1 lb.? I think I have 13.5 oz. right now in the cabinet...but 1/2 will do...we've got a lot of ingredients to add.

Options: I prefer to use tri-colored pasta, especially like Rotini in this one, but those little "wagon wheels" can be fun too.

What is "el dente"? We boil our pasta "el dente" which according to busycooks.about.com means "to the tooth". You want it to be slightly firm "to the tooth" when chewed, not soft. This also means that less carbohydrates will be absorbed by the body...better for diabetics and those on low-carb diets.

2) Broccoli Florets

Fancy Frozen or Fresh

About 5 minutes before the pasta is finished boiling, I add either a package of frozen fancy broccoli florets, or equivalent amount of fresh broccoli florets, washed well. When pasta and broccoli are cooked (pasta el dente, broccoli just cooked...so it is still a vibrant green) pour into a LARGE Colander.

Energy Saving Tip: Cooking the broccoli along with the pasta saves a little energy, and heat in the kitchen on a summer day.

Cool, then Begin to Fill your Salad Bowl

Use cold water to speed cooling

Run cold water over the pasta and the broccoli florets to cool, and drain in the large colander. Toss a bit after it's been sitting for a minute to drain water "trapped" in the florets. Let it drain well.

After draining, dump into your salad bowl. I like a clear salad bowl as it's a colorful salad when finished.

3) Red Kidney Beans

Drain, Rinse, Add

Open a can of Red Kidney Beans and pour into your now-empty colander, give a quick rinse and drain, then add to the salad bowl.

Tip: I always have several cans of Red Kidney and other types of beans on hand for quick recipes. Have never been very good at preparing them from dry, and it's so quick and easy to add canned...also another way to save some heat and steam in the kitchen on a hot day, and a LOT of time.

4) Small Black Olives

Drain and Add

I thought you'd like to see a picture of olives on the tree.

You are going to be adding about a cup of whole small, or 1/2 - 3/4 cup sliced, black olives.

5) Asparagus

Canned or Fresh

You can cook up your own fresh Asparagus and cut into pieces, or drain and add canned to the other ingredients. There's no need to cook if you add canned...and in this particular case, I prefer the soft texture of canned.

6) Ripe Avocado

Cut, Remove Pit, Skin and Chunk

Cut Avocado in 1/2 around the center pit, twist apart, remove pit and skin, cut avocado into chunks, add to your bowl of salad.

7) Seasoning and Spices

I do this mostly to taste

Season lightly with salt, pepper, and/or Mrs. Dash seasoning or similar herbal seasoning. I have no measurements, but go light on the salt, or don't use it at all if you use Mrs. Dash, and toss your ingredients until all VERY LIGHTLY seasoned.

The seasoning pictured is my favorite flavor, I haven't seen this size in the stores, and the price looks quite good, I'll be making a note of this.

8) Feta Cheese - Crumbled

Buy crumbled, or crumble yourself

Either buy Feta Cheese already crumbled, or take it in your hands and crumble it yourself, it's easy. Take about a cup and add it to the bowl with all the rest of the goodies, and toss.

Tip - If you're concerned about fat, "President" brand make a fat-free feta that tastes great in salad.

9) Finally, some Salad Dressing

Adds Moisture and Flavor

A light or fat free Italian Dressing is a nice final addition to give some moisture and more flavor to the salad, about 1/4 - 1/2 a cup.

Now give your salad a final toss, and refrigerate until you're ready to serve.

    This sounds really good, it would be fresh broccoli for me, might give the asparagus a miss, but it sounds great. Some Italian herbs might also go well with the feta cheese. Congratulations on Lens Of The Day, well deserved. A blessing is on it's way to you too.
