Gluten Free Pasta Dishes

About 6 months ago, I found out that I have an allergy to gluten. Gluten, for those who don't know, is in virtually EVERYTHING...pasta, bread, enchilada sauce, ect. I had to adjust my life the hard way and read the back of everything I bought. It took up oodles of time so I want to save someone some effort. PLUS, why do we need that many carbs anyway? If you eat a lot of pasta and bread (maybe too much) try these alternatives. They are relatively inexpensive and easy to make. I am an experimenter with cooking so if something doesn't make sense drop a line and I'll explain more clearly.

Simple Baked Spaghetti

Gluten free with fresh veggies

1 box of De Boles Gluten Free Rice Pasta (can be found at Wal-Mart in the same aisle as the regular pasta)

1 BIG jar of your favorite Spaghetti Sauce

1 lbs of turkey or beef

1 bag of mushrooms

2-4 cups of mozzarella cheese, shredded

1 med. onion chopped

2 cloves of garlic minced

1 med. green pepper (optional)

Grated Parmesan Cheese (optional)

1 can of black olives (optional)

Set oven to 350 degrees. The rack should be on the bottom shelf.

Cook pasta as directed on the box. Be sure not to overcook it. The pasta will become too mushy. Make sure to use COLD water.

In the meantime, sauté the onions, garlic and green pepper slightly until they appear slightly clear. Add beef or turkey and cook until done. Drain grease.

Grease casserole dish with olive oil lightly.

Put a spoonful of sauce down to cover the bottom.

Put the cooked noodles in the dish followed by 1/2 the cheese.

Layer the beef on top of the cheese followed by a 1/4 of the cheese.

Add black olives if you choose to do so.

Pour the entire jar of sauce over the mixture.

Spread the rest of the cheese on top of the sauce.

Add a layer of Parmesan on top if you choose.

Place in the oven at 350 degrees for about 30-45 minutes depending on what kind of casserole dish you use.

If you decided to place Parmesan on top, keep an eye on the cheese, it may burn.

Serving is 5-6 people.
