About The Peanut Butter Mocha Oatmeal Cookies

A few cookie batches ago, I screwed up and doubled the liquid. They tasted fine, but lacked depth of flavor.

In a fit of foolishness, I painted the backs of a few oatmeal cookies with Nutella (chocolate and hazelnut dessert spread). Oh so delicious.

About the same time, a friend introduced me to gourmet peanut butter made by PB Loco. Among their many flavors is European Cafe Mocha peanut butter. An idea was born.

Soon after the idea popped fully formed into my twisted mind, I was offered a free jar of PB to try in exchange for a review. Guess which flavor I chose?

Oh yes, these cookies are good. These cookies are very good. You may have to fight friends and family for them.

The Ingredients 

Preheat oven to 350 degrees

1/2 C. Margerine

1/4 C. Peanut Butter (PB Loco's European Cafe Mocha is best)

1 C. Brown Sugar (packed)

1/4 C. White Sugar

1 Egg

1/4 C. Coffee (using espresso or adding coffee extract will intensify the coffee flavor)

1 tsp Vanilla Extract

2 1/2 C. Oatmeal

3/4 C. & 2 TBS All-Purpose Flour

1/2 tsp Salt

1/2 tsp Baking Soda

1-2 C. Semi-Sweet Chocolate Chips (depending on preference)

"Try PB Loco's Banana PB instead of the mocha for a different taste, and replace coffee with water."

The Directions 

Beat margerine, peanut butter, sugars, egg, and vanilla until creamy.

Combine the rest and mix well.

Put 1/8 to 1/4 cup per cookie on a greased cooking sheet.

Bake for 12-15 minutes.

Cookies should look undone in the middle, but cooked at the edges when removed from the oven, if you want them chewy.

For Normal Oatmeal Cookies

Use an extra 1/4 cup margerine instead of the peanut butter, and replace the coffee with plain water.

While these cookies aren't exactly healthy (they do contain sugar and white flour), they're also a great source of fiber and protein from the peanut butter and oatmeal.

All things in moderation, so I call 'em healthy.

Serving Suggestion

Try spreading marshmallow creme on a cookie, or sandwiching it between two, for a fluffer-nutter taste with a chocolately twist.
