I must admit to it: I didn't create this recipe. As much as I'd like to take credit for this delightful dish - I can't! I'm only the messenger, the presenter of this generous gift to all of you, oh uninitiated ones - home bakers and pastry professionals alike.Allow me to introduce to you: the lovely and charming best friend, wife, and peachy Queen of mine - Chef Karen!

My beautiful wife made her cobbler many times for me. Recently, she started to replace the refined sugar in the recipe with our own natural sweetener, Agasweet flavored agave nectar. Not only is this a much healthier preparation - I think the use of agave nectar actually improved the flavors. The Most Important Ingredient? You Have One Guess...
...the peach, of course. Karen and I love Texas Hill Country peaches. The best and most famous varieties come from Stonewall and Fredericksburg, Texas - a 90-minutes drive from Austin. The peach farmers come to town and offer their gorgeous crops at the farmers market where Karen and I have a booth selling our Agasweet flavored agave nectar. We consider ourselves very fortunate for being at the source of the best seasonal fruit during summertime in Texas.

Shopping List
5 pounds of perfect peaches
fresh butter
pure vanilla extract
AGASWEET Vanilla
AGASWEET Cinnamon
all-purpose flour
baking powder
milk
organic canola oil
ground cinnamon
salt
Prepare The Peaches!
Try not to eat too many of them before you finish the peeling...
- To peel peaches, place whole peach in boiling water for 30 seconds.
- Remove from boiling water with slotted spoon and place in a bowl of ice water to stop the cooking process.
- Pull skin off using blade edge of paring knife to grab peel.
- Also use this method to peel other fruits such as apricots and tomatoes.
Combine in a medium sauce pan:
approx. 4 cups fresh peaches, peeled and sliced
1 teaspoon vanilla extract
1 tablespoon butter
1/2 cup Agasweet Cinnamon
Over medium heat, bring this mixture to a brief bubble;
remove from heat and set aside.
To prepare the pan, drop 1/2 stick of butter in 13" x 9" baking pan and place it in a 325 degree F oven until melted.
Don't forget to remove the pan from the oven before the butter starts burning!

A divine dessert in the making..
The batter has risen up around the sides. We need to bake the cobbler some more until the edges are golden brown and the filling is bubbling in the center.
Look at the beautifully caramelized edges!
Voila! It came out great - a perfect peach cobbler!
The Recipe At A Glance
Copy/paste this for your recipe files
approx. 4 cups fresh peaches, peeled and sliced
1 teaspoon vanilla extract
1 tablespoon butter
1/2 cup Agasweet Cinnamon
Over medium heat, bring this mixture to a brief bubble; remove from heat and set aside.
To prepare the pan, drop 1/2 stick of butter in 13" x 9" baking pan and place it in a 325 degree F oven until melted.
Don't forget to remove the pan from the oven before the butter starts burning!
Place the dry ingredients in a large mixing bowl:
2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
Stir to combine.
Now add the wet ingredients:
1 cup milk
2/3 cup Agasweet Vanilla
1/2 cup organic canola oil
With a whisk, blend all the ingredients to a consistency of cake batter.
Pour the batter on top of the melted butter.
Distribute the batter evenly.
Pour the warm peach mixture on top of the batter.
Sprinkle a little ground cinnamon over the top.
Put the pan in the oven. Bake at 325 degrees F for about 45 minutes.

Sounds delicious but since you've already done the lens for it I'm not sure that I can take the time to make it...just joking, Squidoo lenses do not drive what I feed my family...most of the time!
