Peanut butter is one of my favorite multi-purpose foods. It's a good source of folate and protein. These days, peanut butter is found in about 75% of American homes. Sure you can make a peanut butter and whatever sandwich, but it has many more uses.

Right out of the jar - This is the quick and easy way to eat peanut butter. Make it a little more healthy by spreading it on apple slices, pear slices, or celery.Peanut butter and whatever sandwich - Add jelly, bananas, raisins, bacon, or your favorite topping to your peanut butter sandwich. If you are a purist, just make it a plain peanut butter sandwich. Peanut butter on toast is a good, quick breakfast food.
Adding some peanut butter to your sauces instead of butter will give them a nutty flavor.

My favorite recipe for an entree is peanut butter in an oriental noodle salad. It's a cheap and easy solution when you don't know what to make. These two recipes are good starting points. Then just play with the ingredients using whatever you happen to have in the refrigerator. You can make a quick Thai sauce with peanut butter, coconut milk, and Thai curry paste.

- Many years ago a study of strict vegetarians found that the more of their protein they got from peanuts, the lower their risk of heart attack. I like it anyway but that study lets me eat it guilt-free.

- I love peanut butter. I make peanut butter cookies from scratch, simpler than the Betty Crocker recipe. 1 cup of peanut butter, 1 cup of sugar, 2 eggs. That's it! Preheat oven to 375, roll the mixture into even sized balls (doesn't really matter what size, but evenly sized balls will ensure you don't overcook/undercook) and bake until they are a golden brown. They have a really rich peanut butter taste and great for those who are gluten free You can also add chocolate chips if you wish. :)
