How To Make A Chicago Style Pepper and Egg Sandwich
The Best Pepper and Egg Sandwich Recipe!

Ingredients
- Four green peppers
- Four large eggs
- Olive oil
- Salt
- Pepper
- Italian or French bread (4 sub rolls)
Instructions
Preparation:
First, wash your green peppers, remove the seeds, and cut them up. Crack the eggs and scramble them with a tablespoon of water in a bowl. Put a little olive oil on the bottom of a sauté pan and heat it up.
Cooking:
Add the peppers to the pan and sauté them until they are soft. Increase the heat and add the beaten eggs. Stir so they don't stick to the pan. Add salt and pepper to taste. Cook until they eggs are set.
Presentation:
Divide your pan onto the four rolls. You can also add red pepper flakes, cheese, or giardinara here as well if you desire. Enjoy!

- Pepper and egg sandwiches are so good! For the very best pepper and egg sandwich in Chicago I recommend going to Punky's in Bridgeport. . .26th Street and Wallace. It's to die for, every time I'm in the area I stop in for one.

- Nope, haven't had a pepper and egg sandwich. I have had scrambled eggs on tortilla wraps with salsa and cheese with jalapenos... that's pretty good, too...
