Soup has always been a favorite all over the world. Especially in the Winter months, soup is considered a comfort food. It just makes you feel warm and cozy. There are many flavors and consistencies...broths, stews, creams, meat based, and vegetable based. You can eat a lighter soup with a sandwich or eat a heartier stew with a dipping bread. One of my favorites, though, is my mother's pepperoni soup. She makes it when we have family get togethers and there are never leftovers. This lens is a tribute to my mom and her love of family.

Italian Cheese, Tomatoes, Olive Oil and White Bread


Mom's Pepperoni Soup 

Ingredients

1 lb lean, ground beef
1 C (3 oz) sliced turkey pepperoni
1 C sliced mushrooms
1 green bell pepper (seeded and chopped)
1 bunch of green onions (chopped)
2 minced garlic cloves
1 tsp olive oil
2 tsp tomato paste
(1) 28 oz can of crushed tomatoes
4 C low sodium chicken stock
1 T chopped basil (can substitute 1 tsp of dried basil)
1 T chopped oregano (can substitute 1 tsp dried oregano)
1 tsp ground, black pepper

 

Cooking Instructions

Cook ground beef & pepperoni in a large pot coated with cooking spray over medium-high heat 8 minutes or until beef crumbles & is no longer pink. Rinse & drain beef mixture.

Saute mushrooms, bell pepper, green onions & garlic cloves in hot oil in pot 5 minutes. Stir in beef mixture, tomato paste, crushed tomatoes, chicken stock, basil, oregano, and pepper. Bring to a boil; reduce heat & simmer 30 minutes.

*You can garnish the bowl soup with fresh basil and shredded parmesan cheese*

Garlic bread goes great with this soup 

This is Rachael Ray's recipe

Ingredients

4 cloves garlic, crushed
2 tablespoons butter
2 tablespoons extra-virgin olive oil
1 loaf crusty bread, split
3 tablespoons grated cheese, Parmigiano or Romano, optional
Chopped fresh parsley

Directions

Combine garlic, butter, and oil in a microwave safe dish or in a small saucepan. Heat garlic and butter and oil in microwave for 1 minute or in a small pot over moderate-low heat for 3 minutes.

Toast split bread under broiler. Remove bread when it is toasted golden brown in color. Brush bread liberally with garlic oil. Sprinkle with cheese, if using, and parsley. If you added cheese, return to broiler and brown 30 seconds. Cut into chunks and serve.

Here are the ingredients you need: Serves 8 2 Tablespoons Olive Oil 1 Pound Hot Italian Sausage 24 Large mushrooms, stems removed and thinly sliced (Sliced mushrooms) 1 (28 oz) can chopped tomatoes with their juice 1/2 pound pepperoni, thinly sliced and each slice cut in half 4 Garlic cloves, chopped 6 Green onions chopped 2 tablespoons tomato paste 2 tablespoons chopped fresh oregano (or dried equivalent) 2 tablespoons chopped fresh rosemary (or dried equivalent) 2 tablespoons capers, rinsed and drained 1 tablespoon anchovy paste 8 cups beef stock 2 (10 oz) packages frozen spinach, defrosted and squeezed dry Salta dn freshly ground black pepper 1/2 cup grated parmesan cheese 1/2 cup romano cheese 1/2 cup seasoned bread crumbs 1 cup shredded mozzarella cheese Email me if you have questions! Get Creative... 

Make your own pepperoni

Things You'll Need:

1 pound lean ground beef
1-1/2 level teaspoons Morton's Tender Quick Salt
1 teaspoon liquid smoke
1/2 teaspoon fresh ground pepper
1/2 teaspoon mustard seed
1/2 teaspoon fennel seed, sightly crushed
1/4 teaspoon crushed red pepper
1/4 teaspoon anise seed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Step 1

Combine all ingredients, mixing very well, until well blended.
Divide mixture in half. Shape into slender rolls about 1-1/2 inch in diameter.

Step 2

Wrap in plastic wrap or foil.
Refrigerate overnight. Unwrap rolls and place on broiler pan with rack.

Step 3

Bake at 325 degrees for 50 to 60 minutes, or until a meat thermometer inserted in center of roll reads 160 degrees.
Store wrapped in refrigerator, to use in 3 to 5 days or freeze for later use.
