One of my favourites is pepperoni soup. It just makes me feel warm and cozy.

Pepperoni Soup Recipe

Ingredients
- 1/2 kilo or 1 lb lean ground beef
- 1 Cup sliced turkey pepperoni
- 1 Cup sliced mushrooms
- 1 green capsicum or bell pepper seeded and chopped
- 1 bunch of green onions peeled and chopped
- 2 minced garlic cloves
- 1 tsp olive oil
- 2 tsp tomato paste
- 1 regular can crushed tomatoes
- 4 Cups chicken stock
- 1 Tblespoon chopped fresh basil
- 1 Tblespoon chopped fresh oregano
- 1 tsp ground black pepper
Instructions
Take a large pot - you can give it a little squirt of cooking spray if you wish.
Put the beef and pepperoni in the pot, cook on medium-high heat about 8 minutes or until beef crumbles and is no longer pink.
Remove the beef mixture. Carefully drain and pat dry.
Saute the mushrooms, capsicums, onions and garlic cloves into the pot in hot oil for about 5 minutes.
Stir in beef mixture, tomato paste, crushed tomatoes, chicken stock, basil, oregano, and pepper. Bring to a boil; reduce heat & simmer 30 minutes.
Garnish with fresh basil and shredded parmesan cheese. Serve with crusty bread or garlic bread.
N.B If you don't have fresh basil or oregano, you can exchange for the dried variety. But only a teaspoon, if that!

Garlic Bread
To Serve with Pepperoni Soup
Ingredients
- 4 cloves garlic crushed
- 2 Tblespoons butter
- 2 Tblespoons extra-virgin olive oil
- 1 loaf crusty bread
- Chopped fresh parsley
Instructions
Combine garlic, butter, and oil. Bring a small pot of water to the boil. Put the butter in a bowl to warm over the pot. Turn the heat right down the butter should be soft enough in about a minute.
Spread the butter in the bread
1. First lay the loaf out on cooking foil, enough foil to wrap the loaf completely.
2. Make slices along the top of the bread, almost to the bottom. You want the bread to look like a fairly untouched loaf but the cuts must be deep enough to easily pull apart.
3. Spread the butter down into the slices
4. Wrap the foil fully round the loaf and bake in moderate oven for about 20 minutes

- I have to say that the lens title "Pepperoni Soup" hooked me like a big mouth bass. One of the things I love about Squidoo is learning about new flavor combinations and recipes from around the world. I've never heard of this before and am eager to try it. Fun lens!
