Pepperpot - Our family's special

Pepperpot (Guyanese style) is a stewed meat dish with a difference...

Its secret is cassareep - cassava based Guyanese flavouring that is black and smells like burned sugar. It's an excellent preservative thanks to which you don't need to refrigerate this dish. Just heat up your pepperpot (to a boiling point) everyday.

That's one of the reasons why I can never leave my husband - I absolutely adore West Indian cuisine :) I think everyone will agree that it is so much more than just good food, it is soul food.

It is all about family, traditions, Sunday gatherings, noise and cooking.

You can impress your family and friends by making this authentic Amerindian meal, a national Guyanese dish (a must-have on any Guyanese Christmas dinner table).

Ingredients for your pepperpot:

I'm afraid I can't tell you the precise proportions - just like with the most West Indian dishes, you need to follow your tastebuds.

You will need:

beef chunks (any cheap cut will do)
3 cow's heels to make it gooey
3-4 chunks of ox tail (optional)
1 cup casareep
1 scotch bonnet pepper - BE CAREFUL with this baby :)
couple of cloves
few cloves of garlic
1 stick cinnamon
Salt, black pepper
dash of sugar

How to make pepperpot:

Wash your meat

Place the cow heels into a pan, cover with cold water and bring to boil

Once the scum rises to the top, skim and let it simmer for a while (an hour and a half or so)

Now add all your other meats and hot water to cover.

Once it boils, add your spices and seasoning and cook gently for about 2 hours or until the meat is tender and the sauce is quite thick.

Enjoy Guyanese pepperpot with fresh white bread or rice. We also serve it with steamed cassava.

Take care when handling scotch bonnet peppers!

Cos these babies are HOT!

As you can see, scotch bonnet peppers are one of the hottest peppers out there. Must have ingredient for your pepperpot!

Take extra care when handling, as they can cause skin and eye damage.

Wear gloves when deseeding them, as the seeds have the highest concentration of capsaicin -a crystalline structure which causes irritation to the skin, and it is not water soluble. Only something sugary or fatty can help ease that fire!
