Perfect Divinity
Delicious divinity candy is not only delicious but melts in your mouth making you want to eat more.
Divinity is a fudge like candy made with corn syrup, sugar, and cooked to the hard ball stage and then beaten into stiff peaked eggs whites. Divinity, sometimes called divinity fudge, is classified as a crystalline candy but is different from most crystalline candies because it contains egg whites. The candy is very similar to nougat which contains almonds and honey although nougat is heavier then divinity.
Because good divinity requires constant heavy beating and since it sets very fast, it is more fun, and makes the job easier to make divinity if you have a partner to help with the beating.

Feed Your Sweet Tooth With Divinity

Ingredients:
2 1/2 cups sugar
1/2 cup light corn syrup
2 egg whites
1 teaspoon vanilla
In a 2 quart saucepan, combine the sugar, the corn syrup, 1/4 teaspoon salt, and 1/2 cup of water.
Cook to a hard ball stage, stirring only until the sugar dissolves. Beat the egg whites to stiff peaks.
Gradually pour the syrup over the egg whites, beating at high speed on an electric mixer. Add the vanilla and beat until the candy holds its shape, about 4 to 5 minutes.
Quickly drop from teaspoons onto waxed paper. Makes about 40 pieces of divinity.

Cherry Fluff Divinity

Sweet pink confections studded with candied cherries are bound to tempt any candy dish taster.
Ingredients:
2 cups sugar
1/2 cup water
1/4 cup light corn syrup
1 - 7 1/4 ounce package fluffy cherry frosting mix
1 teaspoon vanilla
1/3 cup finely chopped red candied cherries
In a heavy saucepan, combine the sugar, the wter, and the corn syrup. Cook and stir over medium heat until the sugar is dissolved and the mixture is boiling. Cook, without stirring, to a hard ball stage.
Remove the mixture from the heat. Meanwhile, prepare the frosting mix according to the direction on the package. Transfer this to a large mixer bowl. Very slowly pour the hot syrup over the frosting, beating constantly at high speed. Continue beating while stirrin in the vanilla and the cherries.
Cool this mixture, stirring occasionally, until the mixture hold it shape and is no longer glossy. Drop the mixture from rounded tablespoons onto waxed paper. Top each piece of divinity with a cherry.

No Cook Divinity
This is a great recipe for all divinity lovers that do not have the time to cook.

Ingredients:
1 package fluffy white frosting mix
1/2 cup light corn syrup
1 teaspoon vanilla
1/2 cup boiling water
1 package confectioners' sugar
1 cup chopped nuts
Combine the frosting mix, corn syrup, the vanilla and the boiling water together. Beat on high until stiff peaks form. Then transfer this to a large mixing bowl and on low speed, gradually blen in the confectioners' sugar. Stir in the chopped nuts and blend.
Drop this mixture onto waxed paper. When the outside of the candy feels firm, turn it over and allow the bottom side to dry. Store this candy in an airtight container to keep fresh.
