Perfectly roasted garlic potatoes

Crispy on the outside, fluffy on the inside... the perfect roast potato, with just a little something extra...

I have always loved roast potatoes, but since my stepmum introduced me to the delights of roasted garlic potatoes I haven't been able to cook them without the addition of this simple little ingredient.
Let me show you how I make them. Oh, just one little warning first though - once you've tried them you probably won't want to go back to the plain old 'naked' version!

The foolproof way to make garlic roast potatoes

Step One - peel some potatoes and cut them in half lengthways. Experiment with your favourite potatoes but don't be afraid to try different ones as well. You'll soon find the one you like the best.

Step Two - peel a couple of cloves of garlic and crush them with the heel of your hand against the flat side of a knife. Pop them in a saucepan with the potatoes, and cover them with water. Bring to the boil and simmer for ten minutes or so.

Step Three - drain the potatoes and leave them in the saucepan. Put a sheet of absorbent kitchen paper on top to absorb the steam. Leave to stand for five minutes.

Step Four - take the paper off and shake the potatoes around to make the outsides fluffy.

Step Five - tip into an oven dish, spray lightly with olive oil and cook on about 200 degrees Celcius for an hour or so in the top of the oven. Check frequently to make sure they don't burn, and flip them over halfway through cooking.

Step Six - (this is the best bit!) serve your garlic roasted potatoes with whatever you like. A full roast dinner is best, but they're good enough to eat on their own! Serve as quickly as possible to maintain the crispness on the outside. Yum...

I also love garlic....cut the top off a head of garlic, sprinkle with olive oil and roast for a half-hour, you can squees out a garlic paste that mixes well with butter....and that goes on baked potatoes, cheese toast, you name it.
