This Cheesy Dish is Super Simple To Make

There are many Squidoo lenses about food. And also quite a few claiming that their mac and cheese recipe is the best. So I have to throw my hat in the ring and add my own BEST mac and cheese recipe.

I have tried all kinds of homemade mac and cheese recipes in my lifetime, but when I stumbled across this one a few years ago, it was an instant favorite.



There is no melting butter and stirring in flour or layering of the noodles and cheese. And it doesn't need a topping.

I love how easy it is to make and its a favorite choice to take to pot lucks, parties or school functions where I am always asked for the recipe. All it takes is 5 main ingredients and a few spices of your choice. Everything is mixed together in one bowl, then poured into the baking dish.

It's the only macaroni and cheese I ever make now. My search is over for the best, but I will include links to other "best mac and cheese" recipes and you can be the judge.

Five Basic Ingredients Are All It Takes

Plus a few spices of your choice

Here is a preview of what you will need:


2 cups of elbow noodles (or the small package). Cook them al dente.
1 can cream of chicken soup. (Campbell's Healthy Request or 98% Fat Free are both good choices for excellent flavor)
1 8-10oz package of sharp cheddar cheese
1/2 cup of milk (I use 1%)
1/2 cup mayonnaise

Elbow Noodles


Cook some kind of elbow noodles for the least amount of time suggested on the box.

You want them to be al dente and not mushy.

They will be doing more cooking in the oven.

Soup, Milk and Mayonnaise Make a Delicious Sauce


Open the can of cream of chicken soup (Healthy Request or Campbell's 98% Fat Free are both good) and put it into a large bowl. One with a handle is helpful.

Add 1/2 cup of Mayo and slowly whisk in the1/2 cup of milk.

Having a handle on the bowl makes a big difference.
I have this and use it ALL THE TIME for mixing desserts, casserole ingredients (such as my mac and cheese) and grate my cheese into it.

It's big enough to use as a mixing bowl for just about everything. If you don't have a bowl with a handle, I suggest getting this versatile and affordable bowl.

Add Your Choice of Flavors and Spices

Once the soup, milk and mayo are combined, add your choice of flavor enhancements- or don't, it's up to you.

I seldom add salt to anything I cook and the soup makes this dish salty enough, but a little black pepper and onion powder will add good flavor and I personally like to add garlic and flax seed meal.

(Flax seed meal is just a healthy addition and doesn't do much for the flavor. I try to sneak it into many things I make for it's extreme health benefits.)

Shred Your Own Cheese


I usually use sharp, yellow, good quality cheddar cheese. White cheddar also works, but the finished product won't be yellow. (You can add a sprinkle of Tumeric spice for a yellow color).

I sometimes combine cheeses and add some Havarti for a different flavor.

The most important thing, in my opinion, is to shred a block of cheese instead of using pre-shredded, store bought cheese, that doesn't have much flavor.

The Sauce Mixture


Once the soup, mayonnaise and milk are mixed, and the spices added, stir in the shredded cheese.

Then add the cooked noodles and stir it all up.

Bake and Eat!


Grease a round or square, deep baking dish and pour the mixture in.

Bake at 350 degrees for 30-40 minutes or until bubbly at the edges.

    Before I put it in the oven I think I'll sprinkle some bread crumbs on top. And you know what..................I'll try it tomorrow but with store bought grated cheese because that's what I have in the house. Thanks !
