It's Time For A Pig Roast! Go Clemson Tigers!
In the early 80's when we were much younger and much more energetic, we had an annual Pig Roast at our home. It was always after a big Clemson University Football Game. Our hometown of Pendleton SC is only 4 miles from Clemson so we are big Clemson Tiger fans.
With the football season here and fall in the air, I have been thinking about those Pig Roasts. They were so much fun and, of course, delicious. In looking back through some of our old photo albums, I found these recipes that I thought I would share.
We haven't had our Pig Roast in many years but are fortunate to be invited to the ones that our friends have and look forward to those every year.

Since making this lens, the regular football season is over but an exciting Gator Bowl is ahead on January 1, 2009. What is a Pig Roast?
What is a Pig Pickin?
A pig roast is an event or gathering which involves the barbecuing of a whole hog (the castrated male pig or boar, bred for consumption at about 12 months old). Pig roasts in the mainland American Deep South are often referred to as a Pig pickin', although roasts are also a common occurrence in CubaCuban Pig Roasting BoxHow To Roast a Pig the Cuban Way as well as the non-mainland American state of HawaiiPig Out! Mainland Luau, with roasts being done in the mainland states by descendents of other areas.

The Pig
You Gotta Have A Pig for a Pig Roast!

We had a special cooker made that would hold the large pig. About 1/2 the pig will cook out so allow for that when choosing the size you want. Cook slow for at least 8 hrs. for the smallest one.
In those days, I would camp out with our son and some of the neighborhood children and keep watch over the fire. A group of very special men would come early in the morning and finish cooking it and get it cut up by the time we got home from the game. Now, that is some great friends!

Interesting Barbecue Sauce Recipe
Given to me by a cousin

1 gallon pure Apple Vinegar
2 pounds butter
1 Tablespoon black pepper
5 Tablespoons red pepper
salt to season
Combine all and bring to boil. Simmer for 1 hour at low heat. Makes 1 gallon of Barbecue Sauce.
Photo: Wild Dunes did a wonderful job on the whole pig that they barbecued for our son's Rehearsal Dinner. It was perfect.
Doc's Marinated Slaw

We would use the Marinated Slaw instead of a slaw made with mayonaise for two reasons.
1. We could make it ahead of time
2. We did not have to worry about it staying refrigerated.
Doc's Marinated Slaw
1 gallon grated cabbage
1 large onion diced fine
2 bell pepper diced fine
1/4 cup salt
Let stand for 30 minutes, drain and add
2 cups vinegar
2 cups sugar
A good food processor simplifies the slaw making
Baked Beans

We have these large commercial size stainless steel deep pans that are great for making a large amount of baked beans.
I don't do any measuring but use these ingredients:
Canned Pork n Beans
Honey and/or Brown Sugar
Worcestershire Sauce
Diced onion and bell pepper
Top with Bacon Strips
Cook on 350 degrees until done.

We have had several different kinds of breads but finally decided that fresh loaf bread was the best and it sure is the easiest.
Congo Squares
My mother used to make Congo Squares when we were kids. They are always a big hit and a perfect finish for a great barbecue. My sister Joan did this lens about our mother's recipe and it was chosen as Lens of the Day.

Golly I've never roasted a pig! Plenty of lambs on the spit but I've never been game enough to tackle a pig. It wouldn't occur to me to roast a male animal either, even castrated. I'm intrigued now, and want to give it a try although the cooking time scares me a bit. 8-10 hours? I would have to try a pig roast in Autumn when the restrictions on outside fires is lessened. 5* for a lovely lens and for motivating me to try something new

Excellent lens (5*) I do enjoy a pig roast, but we probably don't have them quite as often here in the UK. The weather here is interesting (i.e. unpredictable) making the planning of a BBQ quite difficult.
