Pineapples are native to South America. Christopher Columbus is said to have discovered the tropical fruit on the island of Guadeloupe, even though it had been grown in South America for many years.

By 1555 pineapples were more well known and were being exported to England. Eventually pineapples were being grown in Florida and Hawaii, thriving because of the tropical weather.

Pineapples are not native to Hawaii, but the association of pineapples and Hawaii are strong. This is probably so because Hawaii was a leader in canning pineapples and experienced worldwide success by 1921 due to the success of The Dole Hawaiian Pineapple Company.

Today there are many places where pineapples are produced, and Hawaii only produces about ten percent of the world's pineapples.

The pineapples are good for you. They have special enzymes that help with digestion and weight control. Pineapples contain a variety or vitamins and minerals. They are a good source of both fiber and vitamin C. Pineapple has has no cholesterol and is low in fat. It is a great addition to any balanced diet. Pineapples are great with lean meats, fish , and chicken.

So you bought a pineapple, you bring it home only to realize it's not quite ripe. Do you put it in a bag, do you turn it upside down, do you let it sit? Well, no, no, and no. Pineapples will not ripen anymore once they are harvested. Pineapples will get slightly softer if left at room temperature for a few days, and the color may become more appealing, but the flavor will not be effected. A pineapple is as sweet as it will get once it is harvested.

You should use three of your senses when determining when a pineapple is ripe: sight, touch, and smell.

Sight - Is the pineapple a golden color? It should be golden colored, not green or orange-red. The higher the color goes up, the riper and sweeter the fruit will be.

Touch - The pineapple should be firm, not squishy.

Smell - The pineapple should smell sweet. If there is no odor, or there is a rotten or fermenting smell, the fruit is too ripe.

1 White Cake Mix
1 Can Pineapple pieces
1 Tub Whipped Cream

Prepare the cake mix as usual, then add 1/2 can of pineapple. Bake as directed. Mix the other half of the can into the whipped cream and use it to frost the cake after is has cooled.

My family loves this cake, and it couldn't be easier!
