    I like them! Growing up, we never had them specifically for Easter, but we raised chickens and some of the extra eggs always got pickled, some just in vinegar and onions, and some with beets to make these pink eggs.

    I've never seen a pickled egg outside of a British pub (where it seems traditional for there to be a big jar of the things on the bar someplace)...and I've never seen anyone ask to eat one in there either! I've always been intrigued about the flavor but couldn't see it mixing well with a pint of beer so never tried one. Maybe I'll give these a shot just for the experience.

    We made these for our basket this year. I ended up using a jar of sliced beets, since we couldn't find whole canned, but it seems to have worked. WOW does the colour ever pop!

    I almost couldn't find whole beets this year either, but I finally did. Sliced would be perfectly fine - it's the juice that's important. Glad yours turned out!

    Thank you for blessing my Snowdrop lens...that was so kind, and very much appreciated. I was intruiged by the title of this lens...I like pickled eggs...not completely sure about the pink, but I'm going to try it out and see.

    What a great lens! A friend of mine from ages ago used to make pink pickled eggs; my husband & I loved them ... I can't wait to make them. I'm also thrilled to see Michel Roux's book in your egg cookbooks list, it's one of my favorites too.

    Awesome! My mom gave me this recipe a long time ago, but I don't think it had chives in it and the onions were optional. (I never use them. I like onions, but they don't like me.) I love pink pickled eggs. You might try serving them on saurkraut (sp?), sometime, since it has a similar "twist" of flavor.

    I love beets and pickled eggs too. Yum! I buy pickled beets and use the juice. Much easier! But your recipe is pretty simple too!

    I am fan of pickled eggs, and pickled beetroot. Never thought of putting them together though. I could see this working for a Christmas meal accompaniment.

    Hi,
    Yes! I've tried them. Both my mother and grandmother always made them for Easter. They taste great. Your tip about using week-old eggs for hard boiled eggs is fact, not myth.
    One of my grandmother's favorite tips shared with everyone was, 'Fresh eggs won't peel and fresh cream won't whip.' Using cream that is a few days old for the best whipping cream is also a fact! Thanks.

    I grew up in the Philippines and there they have salted duck eggs that have a pink colored shell... I got reminded of those when I first saw your lens title... pleasantly surprised about pickled eggs... intriguing.. :)

    We've pickled eggs before, and I like them...but the pink and beet thing was not part of the recipe....I'll have to try this just for the novelty of pink to purple eggs.

    I always get pink pickled eggs off the buffet at an Amish restaurant we eat at a couple of times a year, but I had never thought to try to find the recipe. I think I am going to make these for Easter lunch.

    My niece will love this pink egg. She's a pink maniacs. =) And thank you for the tips for a perfect hard-boiled egg. I always boil it for 20 minutes and always have trouble peeling it. Now I know the exact time needed and I need to boil a week old egg so it's easier to peel. Great lens. --- Blessed ---

    I like a blend of beets and horseradish on ham with boiled eggs on the side at easter. I'm gonna try this recipe. My kids love pickled eggs and this will add a new twist. great lens.

    I've never heard of pickling eggs and they turn pink too! They look lovely on that plate of shredded lettuce. I wonder if my kids would like them though, they turn their nose up at anything that looks different. Wonderful lens!

    I haven't had these since I was a child. They were always such a treat and I loved them! My husband has never eaten them so I'll use your recipe and make them for him sometime in the next couple of weeks. By the way, you've got the color down perfectly (as the background for the recipe)!!! I'm getting hungry now as I think about them.
