Egg Pie
Egg Pie Crust

Ingredients
- 2 ½ cups all-purpose flour
- 1 cup chilled unsalted butter
- cut into cubes
- 3 Tbsp sugar
- ¼ cup cold water
- ½ tsp salt
Instructions
Combine flour, sugar and salt in a mixing bowl, . Mix well.
Add butter and mix using a pastry mixer.
Pour in the cold water a little at a time while mixing the ingredients.
Continue mixing until all ingredients are well combined.
Gather the dough and refrigerate the for at about 30 minutes.
After 30 minutes, roll out the dough until it is about 1/2 cm thick and wide enough to fit into a 9" baking pan.
Place the flattened dough into the baking pan and trim the excess but leave about 1/2 inch of overhang.
Crimp the edges using a fork or pinching around the edges with your fingers.
Refrigerate while you make the filling.
Egg Pie Filling

Ingredients
- 12 ounces evaporated milk
- 3 pcs. eggs
- 1 pc. egg with the white separated from the yolk
- 1 tsp fresh lemon juice
- 1 cup sugar
- 1 tsp vanilla extract
Instructions
Heat the evaporated milk using the microwave oven for about 1 minute.
Combine 3 eggs and the separated egg yolk in a large mixing bowl and whisk.
Gradually add the sugar while whisking.
Add the vanilla extract and lemon juice. Continue whisking
Add the warm milk and mix well.
Beat the separated egg white in an electric mixer until soft peaks.
Fold the beaten egg white in the milk-eggs-sugar mixture.
Egg Pie Assembly
Preheat the oven to 350 degrees Fahrenheit.Pour the filling mixture onto the refrigerated pie crust.
Bake for 15 minutes at 350 *F then lower the temperature to 325 * F . Continue baking for 45 minutes or until a toothpick inserted in the pie comes out clean.
Remove from the oven and allow to cool.
Serve
