Carmelized Onion And Goat Cheese Pizza

2 Tbsp butter or margarine
2 medium onions, thinly sliced
2 Tbsp balsamic vinegar
2 Tbsp honey
1 cup crumbled goat cheese
4 oz. prosciutto ham, chopped
2 12 inch pizza crusts.

Melt the butter or margarine in a medium skillet, ad the onions and cook over medium heat for about 30 minutes, stirring occasionally.

Add the vinegar and honey, stir to coat the onions thoroughly, and cook for another 15 minutes. Remove from heat.

Divide the onions, goat cheese, and prosciutto between the two pizza crusts. Bake for about 10 minutes at 350 degrees, until the cheese is softened.

Remove from the oven and serve.

Basic Pizza Dough

1 1/4 cups warm water (be sure the water is not too hot, and not too cold, or it will kill the yeast)
1 package of yeast (or a little less than 1 Tbsp.)
1 tsp salt
3-4 cups flour

In a medium mixing bowl, mix together the water and the yeast. Stir until the yeast is dissolved.

Add the salt, and 2 cups of the flour, and mix well.

Add more flour as needed, about 1/4-1/2 cup at a time until the dough forms a ball. Do not add too much flour. You may not need the entire 3-4 cups.

Lightly dust your counter with some flour, and place the ball of dough in the middle of the floured area. Knead the dough for 5-10 minutes.

After you have kneaded the dough, place it into a lightly greased mixing bowl, cover it with a clean kitchen towel, and set it aside in a warm place to rise. You did use a bowl big enough to let the dough rise, didn't you?

When the dough has doubled in size, about 15-30 minutes, remove the towel, and gently punch down the dough.

Remove the dough from the bowl and it's ready to use.

Makes 1 large pizza (about 16 inches) or 2 medium (12 inches), or two deep dish pizzas (8-9 inches)

Pizza Sauce

This is the recipe I use for my pizza sauce, it's quick and simple, and tastes great. If you like a lot of sauce, it makes enough for a large 16 inch pizza. If you don't like so much, then it could be used for two 16 inch pizzas.

1 14oz. can of tomato sauce
2 tsp dried oregano
1 tsp worcestershire sauce
1 tsp garlic powder
1 tsp onion powder

Combine all of the ingredients in a small bowl, then spread it over your pizza crust, and enjoy.

Note: Except for the tomato sauce, all amounts are approximate. You can add a little more or a little less according to your tastes.
