They're half circular dumplings of unleavened dough stuffed with cheese, mashed potato, cabbage, dry cottage cheese, assorted meats and fruits!
Growing up in Northeastern Ohio, I can tell you that we ate lots and lots of pierogi! The varieties I remember having most often included stuffings of mashed potato, kraut, dry cottage cheese [my favorite], and PRUNE! OMG, I did not like that fruit as I seem to remember always getting a pit.
Did you know that the pierogi has an unknown origin, but it does have strong links to the Slavic culture.

These Slavic and non-Slavic peoples have Pierogi as a part of their culture: Poles, Ukrainians, Romanians, Russians, Lithuanians, Latvians, and Slovaks. Well, that explains why it was featured in our house at so many meals -- I'm of Eastern European descent. Something else that is curious about the pierogi is that there is a definite similarity to Italian ravioli. In East Asia, similar food is served, such as Chinese jiaozi, Japanese gyoza, and Korean mandoo.

A Pierogi is a Dumpling!
We know size matters with dumplings too!
'Dumplings, originating from China', as defined in a standard English dictionary, fall in two main categories: these are either "pieces of dough, sometimes filled, that are cooked in liquid such as water or soup" or alternatively "sweetened dough wrapped around fruit, such as an apple, baked and served as a dessert." More generally, dumplings may be any of a wide variety of dishes, both sweet and savoury, that are not necessarily dough-based. There are varieties of dumplings made from bread, potatoes, or matzoh meal, with or without filling.
Dumplings are made from balls of dough, crumbled bread, or mashed potatoes. Alternatively, they may be fashioned as small parcels of food encased in dough, batter, pastry, or even edible leaves. Once the filling is put inside the ball or is encased in a pocket, dumplings usually undergo further treatment by boiling, steaming, simmering, frying, or baking. Before the discovery of the New World dumplings did not contain potatoes, but instead were typically made with meat, fish, or sweets.
How to make a Pierogi

The dough:
3 cups of flour
2 spoons of oil
1/2 cups of warm water
salt
The filling:
3-4 boiled potatos
250g white cheese
2 onions
salt and pepper
First make the filling: fry onions on butter until golden brown, mash potatos and mix with cheese, fry onions salt and pepper.
Make the dough: mix all ingredients together and knead just a bit. The dough should be not very smooth, should be quite stickly (you can use more water or more flour). Take a portion of dough and roll. Cut not too big and not too small circles (the best way is by using a glass or aluminum cup).
Put in every circle one small spoon of filling. Seal pierogi by pressing the edges by fingers.
Bring a large pot of water to a boil. Put there pierogi. Cook until the dumplings float to the surface. --kornasia.com.

A Tailgater's Recipe for Polish Pierogi
The Pierogi goes mainstream!

Select the pierogi of your choice. You'll find them in the frozen food aisle. Follow the package directions for cooking which will tell you how long to boil in salted water.
Cut up one large onion and fry in a frying pan with butter until golden. Also fry one package of bacon until done -- do not overcook.
In a disposable aluminum rectangular tin, arrange the dozen or so pierogi. Add one stick of butter cut into pieces. Spread the cooked onion on top along with the cooked bacon. Cover with aluminum foil.
When tailgating, you can put this on a low to medium grill and heat up until the pierogi, onion, and bacon are warm. Serve with a dollup of sour cream. --Recipe is courtesy of Todd Sander, a local tailgating chef in Jacksonville, FL.
