Mama's Moon Biscuits
A childhood favorite
When I was a little girl, my mother made big round baking powder biscuits with a spoon of marmalade baked on top. They looked like full moons. Once when my own children were little, we made a recipe of her biscuits, but cut them in quarter moon shapes. After that we never made biscuits any other way--and they were always called Moon Biscuits. The Recipe - It's No Secret
Any biscuit recipe will do. The name comes from the cutting, not the ingredients. But here is my mom's recipe:Fluff together with a fork:
2 c. flour
1 t. salt
2. t. baking powder
1 T. sugar (optional)
Cut in:
2 to 6 T. butter
Stir in:
2/3 to 3/4 c. milk
Pat dough into a round about 3/4" thick. Place on floured board and cut with glass into quarter moon shapes. Arrange on baking pan, top with marmalade and bake at 350 degrees about 10 minutes, or until the horns of the moons are crispy and the tops begin to brown slightly.
Cool slightly before serving. That marmalade is bubbling hot!
