Recipe: Pomegranate Chocolate Chip Bran Muffins

I love the idea of bran muffins. The idea, but not the reality. You see, bakers today seem to think that adding an extra cupful of sugar will make the bran more palatable- when in reality, they're ruining any health benefits their customers may have obtained from a normally healthy food.

So, in order to reduce sugar and remove fat (aside from the 1 egg in the recipe) from my bran muffins, I came up with this recipe for pomegranate bran muffins. The chocolate chips are just because I like them. :-)

The Ingredients

Pre-heat oven to 375 degrees

1 1/2 C. Wheat Bran

1 C. Buttermilk (or 1 C milk with 1 TBS lemon juice)

1/3-1/2 C. Mott's Plus Sauce Pomegranate

1 Egg

2/3 C. Brown Sugar (lightly measured- not packed)

1/2 tsp Vanilla Extract

1 C. All Purpose Flour

1 tsp Baking Soda

1 tsp Baking Powder

1/2 tsp Salt

1/4-1/2 C. Chocolate Chips

“Chocolate chips are not strictly necessary, but they bring out the berry flavor of the pomegranate.”

The Directions

In a medium bowl, mix wheat bran and buttermilk (or soured milk) and let sit for 10 minutes.

In another bowl, beat pomegranate sauce, egg, brown sugar, and vanilla until well blended. Add mixture to the bran mixture.

Sift together flour, baking soda, baking powder, and salt. Mix all till just blended.

Fold in chocolate chips, then spoon mixture into muffin tins.

Bake in preheated oven for 15-20 minutes.

Makes 1 dozen bran muffins

Tips & Facts

>> Any other sauce (apple sauce, strawberry sauce,etc) can be used, but try to get unsweetened and all natural if possible. The fewer ingredients listed, the better the results.

>> Research has shown that despite the many health benefits of pomegranate it may interact with certain medications. The small amount that's in each muffin shouldn't be an issue, but talk to your doctor or pharmacist if you have any concerns.

>> Wheat bran isn't just good for your lower regions. Studies show that eating wheat bran can reduce blood estrogen levels, thereby reducing the risk of breast cancer in women.

Don't Be Alarmed

While the pomegranate sauce is a bright reddish purple alone, when mixed with the brown sugar it takes on a greenish tone. The muffins will still taste wonderful, they'll just be slightly green.
